Hock Lam Street Beef Kway Teow: Traditional Teochew Recipe since 1911

My Beef Kway Teow list would be incomplete without the inclusion of this famous stall which has been around for almost a century. Hock Lam Street is famous not only for its traditional Teochew Beef Kway Teow recipe, lately it has also become well known for having the most agreeable looking Beef Kway Teow Stall vendor in Singapore (As far as I know).

When you venture into the stall, you are greeted by a young lady whom you think could be wearing a Sarong Kabaya. When starts speaking, you'd probably wonder why she's not wearing a Citibank uniform instead. The fact of the matter is this fourth generation Beef Kway Teow vendor just happens to be an Australian Degree Holder to gave up her $10K bank job to take over the family business! So you can actually buy a bowl of Beef Kway Teow and talk about the BULL market at the same time!



Tina is adament that the receipe be preserved in its original Teochew form, so it comes with salted vegetables and plenty of ground nuts and WITHOUT the familiar Chinchaluk (shrimp sauce). The sliced beef was nice and very tender. Tina tells us that all the beef is still sliced by hand and no tenderizer is used. The stewed beef and tripe were both very good. The beef balls were nice but they no longer make it themselves. I felt the sauce could be more Shiok, but Teochew food tends to emphasize more on the freshness of the ingredients, so Teochew sauces tend to be a little more bland when compared to the other dialect groups. 4/5

Conclusion

Definitely one of Singapore's heritage hawkers and one cannot discuss Beef Kway Teow without including this famous Zhao Pai (Signboard). I am glad that Tina is ensuring that future generations will still get to savour their age old recipe.

  1. I had beef kway teow at this place a few months back. I just want to sum up this place in a few choice words; over-priced, stingy with ingredients and mediocre. High rental is no excuse.

  2. any idea where the beef noodles at scotts food court went? those beef noodles were top priority everytime i was there. and i wanted to suggest trying hokkien mee at whampoa temp market. it's the stall in the middle at the end of the hawker centre. those are GOOD. :)

  3. hmmm...my wife and i tried it the 1st time, 4yrs ago, n we both fell in love with it immediately...we dun mind paying alittle more for quality and good food as its so difficult to get alot of them, now in singapore..i do know that golden shoe carpark has alot of food vendors who sell affordable and big potion dishes...but of course, we have to compromise on the ambience, quality and taste of food and definitely hygiene as well!

    actualli i am a regular customer since years ago. but on one time, when i order 2 kwey tiao, the china girl serve me yellow noodles. i say i order two 2kwey tiao.. and she give me bad face.. and say.. "u order yellow noodles, wat"

    Then after this tina say loud, and hinting say i order the wrong thing. "next time hear properly... see ... we waste the yellow noodles"

    i feel very pissed as i feel i did not do anything wrong. i swore that i never step in again. Attiude matter here.. and later they serve the yellow noodles to another man.

    1stly, I have to give full credit to your goodself in providing us with so much information on all the food researches as well as general knowledges here. Kudos to you!

    2ndly, to address to Mr./Ms. Anonymous, I am a regular customer since hock lam time, way back in the 70s...in the past, we empathised on only good food and wouldnt care less of the ambience, hygiene least talk about the service...but i always give credits to the people behind scene working hard everyday in presenting to us good food...my family inculding my 2 young grandchildren love the beef here.

    On the contrary of what anonymous claimed, from my regular sunday routine experiences from this shop, all are pleasant and heart warming. Just a recall, we all make mistakes in ordering as sometime we just address all type of noodles as noodles instead of their proper names. There was once my daughter-in-law ordered 4 bowls of noodles, and when the orders were being prepared and we realised the cook actually prepared all noodles, which than was pointed out by my daughter-in-law that she wanted the white noodles instead, which later we realised its called thick beehoon. The cook happily changed it without giving us any attitude, as my daughter-in-law apologetically admitted its her mistake by not making herself clear. Sometimes, we just have to be on fair ground when we are the party who are at fault, and by admitting its our mistakes will never kill us.

    For someone like me who do not know how to speak proper dialects or mandarin, when come to ordering, everything to me is noodles.

    We just have to take everything with a pinch of salt.

OMG!!! wazz the fuss here when they serve gd fd??!! tried before, nice la. got gd fd to eat dan mah eat lor, still got so much to complain. singaporean ah. i think theres oso 1 quite gd beef at beach rd, the army mkt, too. here no gd mah go another plc to eat lor. so much complaints for what. haiyo!

    For Sunkist from hwz, not sure what happened on that particular day. However, i hope you believe in anyway, we strongly practise gd customer service and never will hint or belittle our customers, for if i did make the comments, i truly meant to tell my worker to be more diligent in taking orders. Nevertheless, do hope that we will be able to serve our bowl of beef for you and your family, one day.

  8. Eh stupid complain queen/king wake up please? JUST A BIT COMPLAIN LIKE HELL! You want good service go eat at Fullerton loh come here kbkb.. I ate there the first time 2-3 years ago and has never stopped and have never seen whatever shit attitude people said.. Moreover I find the portions generous. Singaporeans are such hard to please people : Complaint Kings, Caesium so stingy pay little wan more. Anyway people this shop has die-hard fans like us so don't need your lousy comments and money. SHOO

I had to commend as I noted so many comments good or bad.The owner a 2nd generation told me years ago that his children dont want to help him.That poor guy work till 7pm and take a bus home.I was sadden until ieat's blog informed that Tina has decided to carry-on this great beef noddle shop. Hurrah! Not everyday is a happy day so sometime some of us are not happy but let enjoy the good food.

  11. my virgin post here! i luv ur food blog! really appreciate e effort u put in to make tis site so interesting. e pictures u posted always make me wanna try them!

    anyway, as i'm eating my beef noodles, i'm posting my comments. i went over abt half an hour before they close. i believe e short hair, bespectacled lady making e food orders is Tina. tis is my first visit to their store. (even though i'm working very near them for 1 year plus, i haven't been to their store at all!) right after reading ur blog, then i had tis craving to try out their beef noodles!!

    cos i still got work, so i tabao back to office.

    overall, i feel tat e food n e service they provide is very good. e china lady even offered to help me add e green garnish when i wanted more of it!

    i would say tat tis will not be e last time i'm going over. it's only e beginning! ;)

  13. I ate my first bowl of beef noodles in a food court years ago and couldn't understand what pple saw in beef noodles. Then I ate here and I must say that this store singlehandedly saved beef noodles for me, with its delicious soup/sauce and fresh ingredients. Although i have gone on to find another yummy beef noodle store in AMK, this one still ranks as one of the best in Singapore for me. Hope it continues selling its noodles forever.

    I still remember very clearly when my father brought me to Hock Lam when I was young, the wonderful pork lard fried kway teow, the hakka woman who sat on a small tool,everyday, to handmade her most ever delicious bouncy tendon beefballs in clear beef soup, delicious and juicy fillings of popiah, the full punch sour plum juice and of course hock lam beef...those were the days when we really enjoyed ourselves with good food and thank GOD for granting us with the food. Now, most of them were gone to be left with very little or no offsprings to take over their legacies. For this, I have to give credits to Tina for taking this big step in her life to keeping one of the few legends here in our country.

  19. I second what smart said. Try the Changi Village beef kway teow. I've been returning for more since I tried.

    The uncle selling at CV is actually the uncle of the guy selling his beef kway teow at East Coast lagoon hawker centre which is very popular too.

    Now let's talk about the word "best". You may think what you've tried is the best but that's because you haven't tried better stuff yet. Saying that it is the best you've tried so far is more apt.

    I am quite suspicious about the recent comments defending this said stall especially the first wave which came consecutively in a matter of minutes but I won't go into it because this is a food blog.

    i am a soft spoken guy who alway have thank you, sorry in my vocab. i am not hesistant to make any "sorry" as well.

    Ok. i make a new point here. the food taste WONDERFUL. but the attitude i received back then is something which keep me away. Is that ok? Want good service? try hotel? ok.. i be going there then. kidding.. i where got money. I tell you wat, recently i went to nosignboard at waterfront, the service very good loh. No service charge also. But the one who serve me is a malaysian, and the one who run after me (cos i forgot my hp) is a indo-guy .. not sure..

    It the warmth i feel there. I start to sweat a little here now. I afraid to go china SQ. Maybe i will spot check HL beef.. who knows!

    Anywa i not hard to please one lah. anyone who know me well know i causal going, but struck up attitude will just prevent me to go. Cos i am feeling i am begging the food stall owner to let me pay and eat his stuff. (not pointing finger to WHO hor).

    A few stall already got blacklisted by me. Some are real bad attidue (who appear in papers as well due to bad attidue) but however their food rocks.

  21. hmmm... today tried e dry version of e beef noodle.. sad to say.. but it's really horrible... =( e moment i put e noodle wif e sauce, i'm overwhelmed by tis strong taste of garlic!! no, i dun hate garlic. it's juz tat instead of enjoying of food today, i'm struggling to finish my noodles (but in e end, i threw away my bowl of noodles as i feel i'm eating garlic noodles rather than beef noodles...

    luckily, i requested for a small pack of soup n it's really small pack lor!! :( abt 5 mouthful only... haiz..

    nonetheless, e service from e same china lady (e quite short one) is good lei.. if i go there e next time, u can be sure tat i'm gonna eat e soup version n never e dry version again...

  22. This is really interesting, I am a avid reader of this blog but never really wanted to post anything but always will go trying at places which the team recommends and I must say, 8.5 out of 10 times I visited the places they recommended are GOOD!

    But I realised this is one of the postings which attracted so many comments and critics. Mainly from a few people as I can read. Hmmm, have not personally tried this shop (however will definitely do so since its so highly and widely discussed here)but some of my relatives tried it and they like it so far. Never perk me to try it as its too far for me and too lazy to travel too..heehee..

    Reading from the comments, I realised its more of personal attacks than food commendation, and I wonder why. From here, besides the food or service, both my partner and I are really excited as well as interested to find out who this Tina is.

    To Smart, I tried the CV quite some time, its nice but not sure why, feel something is lacking. Not a food veteran but just have this lack of feeling or food taste after eating it. Maybe its not my day that day when I tried it, I will definitely go back and try again! I thought the one at beach rd, around army market, is gd too.

    To Khim, I think I will take your advice, stick to the soup version..the dry version sounds abit too much and heavy for me.

    To Caesium, it takes a thief to sniff out another, if you do know what I mean.

    e soup's very good n power! dun think they added any MSG as i never felt thirsty at all.. e flavor comes from e cooking of e sliced beef in e soup, i would guess.. thus, towards e end of e day, i'm like drinking e essence of beef! ;)

  26. I have tried all the places that offer good beef noodles, and i have to say Hock Lam still stains my lips...yum yum. Changi village, Golden mile FC and ex-cuppage FC are right up there as well.

    Met the old man (owner) about 4 years ago after NDP balloting at Far East Square. I'm not sure why people are complaining about poor service? He was definitely generous with his portion that evening. Even had the time to chat with him.

    Perhaps some had one or two bad encounters. I'm sure Tina will carry on retaining her customer base and that means staying warm and friendly.

    My first time commenting too. Sorry that it's for a comparatively long-ago post!

    Anyways, I haven't tried the Hock Lam at China St, but there's one near my house, at Kovan.. and I wouldn't say this one is worth the moolah. It's good, yesh...but not good enough that I'm justified in coughing up $5 for one bowl. The sauce and the chilli are a bit too bland for my taste, the latter without any of that delicious vinegar-y tang associated in the Scotts Plaza one. But the beef slices were indeed good and tender.

    Oh well mebbe it's cos it's a branch and so not as QC-ed? I dunno.. anyone tried both China St one and the Kovan one? Still wondering if it'd be worth it to pay a visit to Far East Sq...

Am a beefy lover for as long as I can remb...hmmm...i stay at florence rd area...theres one near my plc, name Hock Lam Beef, and i tell u!!! i fall madly in love with it immediately...ok ok, maybe i am abit exaggerating but the soup and gravy sauce, OH MY GOODNESS!!! they are very full-bodied, just like my vinetage wine and the chilli sauce with blue ginger, SUPERB!!...one at kovan..hmm..near my plc too but gotta drive a distance..

    Heard from the young lady boss, their 1st branch is at fareast sq and my daughter is working near there area, she commented that the Q is always to the rdside, therefore, she has yet to try but well, since i have one here near my residence..y go all the way to fareast sq?!

    Tried the AMK one too...well, if you are looking for valuable for money and not quality than yes, go ahead for this but for me, i rather pay more to be in a comfortable area and quality food.

    but sad to say tat e price increase liao... =( expensive for me to ta-bao a big version at $6.80 lei.. last time, eat there is $6 for big version. if tabao, it's 50 cents extra.. now it's additional 30 cents more..

  30. there's another hock lam franchise(i think) next to great eastern building at pickering st.

    The dry version is pretty ordinary. The star of the show is the soup. when i tried it i nearly choked, cos i was so surprised at how rich the soup was. Picture a normal bowl of soup that comes with beef noodles, and multiply it by 10.

    The soup itself warrants a trip to the place. Best beef noodle soup i've ever had. evidence is in the long queues during lunch on weekdays. its closed on weekends though.

  31. Here's another example of how franchising ruins the food.

    I tried the soup version in late September - the first time I was back there since they bumped up the price due to increased costs, and discovered that the soup stock is now barely a shade of what it used to be.

    However, the quality of the soup stock was so bad - watery and lacked the herbal taste - that I've decided not to go back there ever again.

    The lady who I believe is the daughter of the boss, was no more there, but the Chinese lady who used to man the noodles counter was still there.

    Am I the only one who noticed the drastic drop in quality?

    The North Canal Road branch is opened by the brother or uncle of this Hock Lam Street beef noodles.

    Both are highly overrated (IMHO) though.

  35. Hey! I was in sg last week and i specially went back to my fav shop for my beef kway teow...the dry verison, its still very very good though, unsure why damien and lb had that comments. Ya, was surprised that the price increased but hey, c'mon guys everything increased nowadays due to petrol. You should visit HK or Taiwan one day, than probably you guys will appreciate the affordable dining experience in sg.

    I was chatting with Tina the other day and she has yet to do any franchising. She runs only 2 shops. 1 fareast and another near howgang.

    For the amount of overseas eating experiences and coming from HK, i certainly agreed with Khim that the soup is SUPERB! no thirst feeling.

    Keep up the good work, Tina! Fully understand the pressure and stress you are undertaking, esp. running a family business.

    If you do read this blog, take geniune comments into considerations while others (i feel as personal attacks) with a pinch of salt. In life, we are always more gracious with personal opinions' attacks than to give others a pat on the back!

  38. I went to boat quay today to try the beef today. Its portion has shrank drastically and price increased too, i used to have tendons at $5, now its $6. The dry version is NOT as good as in the past too. And I dont understand why the soup is darker in color now, isnt clear soup better. And the chilli used to be so damn good, now it no longer has the past tasty urge for me to go back again. WHAT HAPPENED! sad =(

    I share the same sentiments. Was there 2 weeks ago. No knowing why, the soup has turn darker and the taste is so different from day 1 i tried there and the chilli has no longer holds the punch there anymore.

    Tried the one at Toa Payoh, which Damien dies for it. So-so too. The gravy is watery and tasteless. The chilli is nothing worth talking about too.

    Still prefer the one at lagoon.

    Tried the one at Fareast Sq...personally thot the gravy is one superb feature of the store, besides the owner (heehee)...i am a regular since her father's time, his version is too salty for me...thot hers just nice. If you do find it bland for your taste, why not ask for more gravy? Think that will do wonder. The richness and beef broth taste urge you for another bowl!

    The AMK one has changed the taste quite abit. Sigh, now i am always being dragged all the way to Fareast Sq (by my gf) when I am jsut staying in AMK.

    Has anyone tried the oneh-oneh at Amoy St? Best in SINGAPORE! The skin is really really soft and chewy...And the steamboat fish head near Upper Seragoon? Another best in SINGAPORE!

  41. Counted 8 slivers of thinly sliced beef, 6 pieces of tripe and 4 small pieces of tendons for my $6+ bowl of kway teow.

    Overpriced and overrated for a mediocre bowl of kway teow.

    I had the $6 bowl too, mine was $6.50 (fareast sq) though, dont understand why yours was $6 only? I had a handful of tribes, tendons, shins, 2 beefballs, sliced beef and tina personally recommended me to have that tendon shin (all for $6.50 only)...but of course, i dont have the patience like you to count all the meat in my bowl though...haa...for the prices all increasing in sg and the world, we must give credits to those who can still survive this harsh environment.

    Anyone tried the tau suan in bugis village hawker center? man by an old couples....that is SUPERB! v v v niceeeeeeeeeeee...

  44. if hock lam's is expensive at $5.50, please check out east coast lagoon's!!! i got a shock when i was there a month ago to eat my fav dish. $4 a bowl and i need 2 bowls to fill my stomach! if i compare, the hock lam's $5.50(this version fill up my stomach) version would have cost $6 at east coast lagoon.

    who is expensive? and who make the most profit? is east coast!!! less staff, small stall. Hock Lam got bigger shop and more staff.

    I will nvr go back to East coast again.. it is so expensive.

  47. Was at my favorite beef place again. Chatted with Tina, as usual. She is still as cheerful and frienldy despite working 13 hours daily, I salute her for that. Always wonder where she finds such energy and she told me, passion keeps one going. I believe her.

    For over 40years being a Hock Lam beef's patron, I must give full credits to her. Being once a high flyer investment banker, earning good and big bucks in 2 renowned banks, to becoming a hawker in continuing her family legacy, my wife and I totally adore this young girl!

    The taste of her beef soup, beef parts and chilli taste exactly like her grandfather's and father's. Not sure about others but most of the time, my wife will have good chat with Tina (unless she is busy) and we always enjoy our meal there. We also see her chatting with her customers too, be it young or old. Knowing her for 4 years, have never heard her saying she's tired and couldn't be bothered with the regular old customers, that is something funny to come across here. When reading most post comments here, I realised there were many personal attacks instead of food comments or even words of encouraging to these younger generations who are willing to slog hard in keeping their family legacy alive.

    Till I go HOME to LORD, this will always be our favourite beef shop. Keep up the good work, Tina!

  48. I think the branch one along Upp Serangoon Rd's standard is the same as the one along China St but i still prefer Hainan xinzhou beef noodles at Lor 7.

    Hock Lam Beef’s 97th Anniversary Event!

    The makers of Hock Lam Beef extend an open invite to everyone to join in our 97th Anniversary Celebrations on October 1st!

    Date: 1st October 2008, Wednesday (Children's Day/Hari Raya Puasa holiday)
    Time: 10 am to 3 pm
    Location: 22 China Street, Far East Square

    Every bowl of piping hot beef noodles made with 13 herbs and spices sold will be money donated to Operation Smile Singapore for medical missions to treat children with birth deformities in Cambodia - every single cent!

  50. Hi,

    i once tried the beef noodles at the kovan outlet when they first opened. i came with a group of friends after some church activity. But i was somehow disappointed that the noodles were not up to my standard. In my opinion, i feel that the other "Hock Lam Beef noodles" at purvis street, is better. The soup and gravy really is delicious. Somehow i am not sure why Dr Leslie hasn't gone down to try it and review it. No one has even commented about the one at purvis street here, or did i miss it out.

    Just my honest opinion and taste. Hope i did not offend anyone. Cheerios!

  52. hmmm... just had my fix yesterday evening. i was there around 8pm, almost closing time for them.. saw tina there..

    had my usual mixed beef noodles soup & went back to office. later tat night before i left e office, i was so thirsty tat i actually gulped down half a bottle of my 800ml water bottle.. i tot they dun add msg but somehow, tat's e only thing i had yesterday night...
