Hainan Hokkien Mee: Takes a Hainanese to fry Hokkien Mee

I have made a most momentous decision of my life! I finally decided that Hokkien Mee MUST be fried with thin Bee Hoon and it MUST be dry. Some of you might be wondering how this little revelation can be so momentous. But for me, it was like the words of the World's most famous Hymn, Amazing Grace: I was blind, but now I see.

Revelation is like that. You go through life not knowing what you do not know. Then something happens and suddenly it was as if someone turned just turned on the lights and you realize what the fuss is all about. Know what I mean?



This is one superb Hokkien Mee. It is unlike a lot of Hokkien Mee nowadays which are prepared more like a pasta where the stock simply added at the end and served really wet. This one was fried until all that wonderful stock has been completely absorbed into the noodles and beehoon AND sealed. Every mouthful was such a delight that it really is a plate of Hokkien Mee that I slowly savored every mouthful. 4.6/5

Now the weird twist at the end is this. How come one of the best plates Hokkien Mee in Singapore comes from a stall that calls itself "Hainan" Hokkien Mee? Surely the owner is not making the statement that it takes a Hainanese man to show the Hokkien how to fry Hokkien Mee properly right?

Conclusion

Stands out as one of the best plate of Hokkien Mee I have tasted. Only letdown was the chilli which was not quite fragrant enough and you get a really small portion for $3.

Yeap... You simply need to fried it with thin beehoon for the dish to fully absorb the essence of the stock. Nam Sing @ Old Airport Road Food Centre does it similarly... The "chor" beehoon simply do not absorb the stock as well.

come to think of it, original hainan-style fried noodles does resemble hokkien-style noodles, in terms of gravy content, but not the amount of ingredients though.

Just had it on Monday.Funny I try to order a $4 plate but they insisted they sell $3 plate ONLY.This HKM is superb but the $3 plate not enough for me, so maybe should order x2.

oooh, the fiance loves it! i like it, but the portions are really small! $5 looks like it's only a little more than $3 so we always order three $3 plates for both of us!

shall try it real sooN! btw, just like to strongly recommend this stall at the hawker centre along Circuit Road. Not too sure of the stall unit no. but it is located right at the end of the hawker centre, facing the road, opposite the stall selling Zhu Cha. The stall owner takes real effort to cook the hokkien mee! Sometimes, we gotta wait as long as 45 minutes for our order but trust me, the wait is worthwhile! my family has been eating it since 20 years ago and now my hubby loves it!

Hokkien mee is my son's favourite but he doesn't like yellow noodles very much. I'm sure this will be a hit with him.

Grew up in this area, stayed at Blk 2...they used to be even better and nicer...now that the crowds are getting bigger, sometime i got burnt beehoon or hard beehoon...but still, it is one of the better ones i tried in singapore...

agreed on the price, they were aldy getting very expensives few yrs back...

dear smart, they insisted u getting the $3 instead of $4, there r few reasons. one running low in their quantities and they want to sell more plates so they normally insist ppl on only getting $3 instead. another one is becos one of the $4 ingredients has ran out, so they will not overcharged u on this...these r some of the incidents i encountered over the yrs.. =)

Have eaten this number of times.And thought this is a dry version of hokkien mee.I enjoy it alot too.

the stall at circuit road only opens in the evening around 6 to 7pm. They close around midnight. Oh ya, the stall is closed on Wednesdays.

i'm not too sure as tat store should be located in e other block. (there's 2 block of hawker centre - 79 & 79A)

reason is e choice of food there is rather limited n there's a lot of stores selling similar food..

e last time i was there wif my bf in tat block, there was at least 3-4 stores selling orh luak, hokkien mee or desserts..

I absolutely love Hokkien Mee. What a great site you have here.

I have tried Lor 29 at East Coast. Good. I also recommend the Hokkien Mee stalls at the Bedok South Hawker Centre and the Bedok Camp Hawker Centre.

However I am a bit confused by your rating. You mentioned that Yi Sheng HKM is better than Nam Sing but yet you only ranked the former 4.25 vs 4.6 for Nam Sing. Why??

Tried it today, a very good plate of HKM!! except for the portions...I counted 1 slice of sotong and 2 prawns on my plate...could do with more eggs too...

i tried it today too, found the noodles flavourful enough wo the chilli. agree with liverpool, the portion seemed a tad bit small but just nice for a person who doesn't eat a lot.

my fave plate of hokkien mee though, is still the one at tampines east link food court. it's the same stall selling duck rice and kuay chap.
guess i still prefer the chor bee hoon and nua nua style of hokkien mee.

I used to frequent SJAB HQ across the road, and after tekaning my trainees, a bunch of us would go eat at golden mile fc. It was always a choice between Hainan Hokkien Mee on level 1 or the fried kway teow on level 2. I loved both, you should check out the fried kway teow (with fried mini ikan billis)!

Their portion are really very small for the $3 plate. It taste good and the wait can be long as he takes his time to fry their noodles.... if you are very hungry or a big eater. Maybe 3 plates can make you feel satisfied.

oh tried this today. Very good~!!! :) I know it's supposed to be dry but I REALLY wish it'll be a little bit wetter at least. Reminded me alot of my childhood favorite Hokkien mee at Tekka Market. Portion I agree is very small. LOVE the thinner yellow noodles and thin beehoon :)

Flavourful but a tad too dry for my liking. Found it similar to Nam Sing, but prefer the latter.

This one gets a mere 3.75 for me - had wanted to give a four but thought the portion was too small and they quite niao with their liao.

tried tis hkm yesterday.. was only a 4/5 for me... overall, it's well fried but e taste is not as good as e first time i tried e hkm from singapore fried hokkien mee at whampoa temp market.. tat taste is really unforgetable!! since then, i've been trying to find back tat memory..
