Frog Porridge - Ever wondered what Kermit tastes like? Jackson FC Part 4 of 4



Fans of Kermit, be forewarned. This is one of those NC16 blogs and you may choose not to read it. Now, I am not a frogs legs afficianado, so I only do this because the stall is quite famous and it is the kind of story that would make some go EEEEwwww!

Quite interesting to note that our frog supplies come from Lim Chu Kang. Yep, if ever there is a war and we are forced to rely on our own food sources, everyone would be chewing on a frog's leg. (Finger or should I say, toe licking good!) Mind you because of the short supply, one whole family may be forced to share one frog, then you would have to eat the whole frog, eyes, skin, innards and all.

You know why we don't eat frogs? No, its not because it looks green and slimy. It's because a frog like the one in the picture takes 3 years to grow and produces only four legs containing only a small amount of meat. Compare this to a Chicken which takes just 3 months to grow and can provide 1 kg of meat and you know why the whole world is eating chicken.



This is how you prepare a claypot frog. First take a living, breathing frog. Whack it over the head and then....... (Censored). Put the meat in a claypot. Add oyster sauce, dark soy sauce, chinese rice wine, sesame oil and a handful of sliced ginger and chives, and cook over a hot stove.




Make sure you simmer it long enough to ensure that the meat is tender. Frog meat that is undercooked is tough and stringy and gets stuck in between your teeth. That's what happened to me and I had to get them to simmer it a bit longer.



The taste? Most people say it tastes like chicken. Hey if it tastes like chicken, why eat frog legs? Its more expensive, ($6.50 for a pot with 1 frog) and you don't get much meat with it. I found that the flesh has a delicate sweetness about it that you don't find with chicken and the meat is more tender (after simmering a bit longer) and of a different texture. Ok if you compare with chicken, its like eating the flesh around the two bones of the mid joint (Flexor Carpi Ulnaris and Brachioradialis muscles between the Radius and Ulnar bones, for those who really want to be pedantic).



The sauce is very tasty and goes well with the porridge. The porridge itself does not have frog meat in it. It is cooked with pork bones, so its like Chok (Pork Porridge) but without any meat in it. Theirs is quite savoury. The set above costs $14 and has 2 frogs. Quite pricey, I felt, for such a small amount of meat.




Conclusion

Nice, but not the type of thing I would "Gian" (crave) to eat. For that kind of price, I could get a claypot full of braised chicken pieces to feed a whole family. But it is quite healthy because it has very little fat, so its good if you are looking for something delicate, tasty, healthy, have a bit of extra cash in your pocket and don't have to feed a family of five. 3.5/5

Hoe Nam Prawn Noodle Jackson Centre Part 3 of 4



This Prawn Noodle was recommended to me by the "Grand MakanGuru"* eslim himself. So I feel safe to rave about this one! My benchmark for Prawn Mee so far has been Beach Road Prawn Mee at East Coast. Now there are two places sharing the same honour.

Hoe Nam has been in business a long long time. There is a good reason why. Their prawn noodle soup is very very tasty. They don't have any gimmicks. You don't find giant king prawns here. You just get your traditional Prawn Mee with options for Pork Ribs, Pig Tail and Abalone (Ok maybe the Abalone is not so traditional - I don't know so please share if you do know) And best of all, the prices are not exorbitant. They start at $3 per bowl with quite a generous serving of medium sized, really nice and crunchy prawns. (I believe they use Thai Prawns which are fed better quality feed - also more expensive)



Why is the soup so good? The stallowners say it is because they sell so many bowls of prawn noodles a day, that they have to boil more prawns in the stock. More prawns, more taste. It's that simple. Aside from prawns, the other main ingredient in the soup are the pork bones. The soup is simmered for over 24 hours to extract all the taste from the prawn and pork bones. Other ingredients? Bit of soy sauce and secret spice mix (I guess it will remain a secret).







Conclusion

Great Prawn Noodle! Especially like the soup. Been back many times since! 4.5/5

Bayshore Delicious Crabs - Jackson Centre Part 2 of 4



I did not actually plan to eat crab today. I mean, crabs are not your typical lunch item. But after shooting pictures at the Ngo Hiang place, I walked past this store with a big cage full of crabs and spied a familiar looking face. "Hey, Uncle! Aren't you a TV star?"



It was none other then Tang Hu, the veteran actor who started in the good old days of Black and White TV with Wang Sa and Ye Fong. What was he doing here? Well, it turns out that this is his semi retirement business. He started this stall 6 years ago after insistence from his friends that his wife's crabs were shiok shiok. Seeing that I was enthusiastically shooting pictures of his crabs, he gladly got up to teach me a few tips on picking the perfect crab.




First of all there are a few types that are commonly available in Singapore. The ones from India and Sri Lanka usually have this type of twine binding their claws as oppose to nylon ones for the Indonesian Crabs. You will also notice the difference in colour between Sri Lankan and Indian crabs.



So how do you pick a good crab? First, Uncle Hu tells me, is to make sure that the crabs are heavy. I guess you can only tell after handling a few heavy and light crabs. Secondly, you pull on the back legs and the tone should be good ie the crab pulls his legs strongly away from your finger. You then decide if you want a Man crab or a Woman crab. Don't make the mistake of picking a Woman crab if you plan on ordering pepper or chilli crab. All that roe is lost and wasted in the frying process. (This is a Teochew Ah Hia's point of view OK?) Woman crabs should be simply steamed so that you can appreciate all that roe.



Unlike a lot of big seafood places, the crabs here are killed on the spot and fried to order. (I have always suspected that the big seafood places steam their crabs first then throw the prepared chilli sauce over the crabs before serving - if someone knows for sure please let us know) Here, everything is prepared when you order. The picture above shows the crab simmering in the white pepper sauce. This will simmer for 5 minutes till the sauce thickens then served. This way the sauce is infused with the sweet goodness of the crab.



I don't usually like food that is too spicy, so I found their chilli sauce just nice. Its also a bit sweeter, just the way I like it. Great with mantou. 4/5




You can see from the picture that the crab is pretty solid. The white pepper sauce was nice but not overpowering such that you can still taste the sweetness of the flesh. But having also tasted the famous White Pepper Crab from No Signboard before, I have decided that maybe I just don't like the White Pepper Crabs as much as Black Pepper Crabs. 3.5/5



Conclusion

Very good and solid crabs. Didn't quite enjoy the White Pepper version but I would go back and try the Black Pepper Crabs next time. The nicest Black Pepper Crab I had was in Bangkok. The difference is that the crab is first coated with Sweet Potato Flour and deep fried before it is added to the sauce and simmered. Wow, but it increases the calorie count immensely.

Lao Zhong Zhong Ngo Hiang - Classic Teochew Style Prawn Fritters - Jackson Centre Part 1 of 4



Discovering Lao Zhong Zhong is almost like opening your "O" level results slip and finding out your got straight A's when you only got 3 A's in your prelims!! Those of you who don't like to hear me rave better stop reading because this is one place you MUST visit if you call yourself a true foodie!

OK, so I am a Teochew Sua Gu from Swatow (Teochew Ignoramus from Swatow Province in China). This Teochew Ngo Hiang stall has been in existence since the current owner was only 11 years old. (He's almost 60 now) Started by Mr Tan's father, this stall IS already very famous! I mean, they got a newspaper cutting dating back to 1986 by Margaret Chan already declaring them to be the best Teochew Ngo Hiang in town! What have my parents been depriving me all these years?



After the dissappointing Ngo Hiang at Lavender FC where all the stuff was bought from the supplier, I was really elated to find some Teochew Ah Chiks and Ah Sohs (Uncles and Aunties) busily wrapping Ngo Hiang at Lao Zhong Zhong. Now there are times when being Hou Lian (Proud) and Ngerng (Stubborn) can be an asset and this is definitely one of those times. All the Teochew eateries that I have sampled so far have revealed a common personality trait among the famous Teochew food sellers. They are all Hou Lian and Ngerng when it comes to their food. They just feel that it is their God given duty to produce quality food for their customers. Click here to read about the other Teochew eateries.

One of the reasons that that Mr Tan has refused to buy from suppliers is, aside from the poorer quality, the fact that most of the Ngo Hiang that you eat is the Hokkien style Ngo Hiang.(No proper Teochew Ah Chik would want to sell Hokkien Ngo Hiang, OK?) "What's the difference?" I hear you ask. Plenty. First we Teochews tend to use lots of waterchestnuts in our cooking. So they add liberal quantities of waterchestnuts in their prawn rolls and waterchestnut slices. We Teochews also love Yam (Or Nee is Teochew) so they add yam into their Pork Rolls. (The last time I had yam laden pork rolls was in Bangkok where there is a huge Teochew community) The chilli is not overly spicy and is made of sweet plum sauce, sesame oil, black vinegar and peanuts. I don't usually like the chilli, preferring the sweet sauce. BUT this one is really Phwaaa Sayah! (Unexpressibly delicious)



Of the 10 odd items, only the Tau Hoo is bought from the supplier. They even make their own Pork Sausages from pork thigh meat. The crispy prawn fritter is so light and crispy that it just melts in your mouth after the first bite! Dipped into the sweet, spicy and tangy chilli.....



This Heh Chor (Prawn Roll) is definitely the World's 2nd Best (World best dunno where). Full of crunchy and sweet waterchestnuts, if you are feeling a little depressed, just eat 2 of these and guarantee you feel better. The Ngo Hiang (Meat Roll) is pork mixed with yam and has that subtle sweet flavour mixed in with the savoury pork and five spices. Phwaa Say! They are also famous for their Lo Mei Squid, though I did not know how to appreciate them.


Another item you just have to save up calories for is this Waterchestnut slice. It is made of egg, flour, waterchestnut and pork lard. Not for those with cholesterol problems (Maybe you should take some Xenical with this meal yah?) But one bite of this and all your troubles seem so far away! MUST TRY! Conclusion

What are you waiting for? The Jackson Centre will be closed in June 2007 and demolished to make way for a new tunnel so you better be quick or you'll miss out on real Teochew style Ngo Hiang.
