Hillstreet Char Kway Teow: I have eaten the rest, this is still the best
It is good to know that some things never change.
Almost 2 years ago, I blogged about Hillstreet Char Kway Teow and even in the early days of the blog, I already gave this old man a 4.75/5 for his Char Kway Teow. I think it was the very first time I awarded a 4.75/5 to any hawker. Now, two years later it is time to post some new pictures of the Char Kway Teow and let some of our newer readers know about this CKT legend.
I think that any self confessed Char Kway Teow fan will need to eat this Char Kway Teow at least once in their lives. After reviewing several other Char Kway Teow stalls, I still haven't really found any stall that could surpass this old man's plate. Since Char Kway Teow isn't exactly Cardiac Friendly Food, I always tend to tell myself that I shall only eat half a plate so that I can enjoy the flavour but not feel too guilty after that. But I need to confess that every time I come here, I always end up with an empty plate! Really can't help it. 4.75/5

My all time favourite. When i was younger and working part-time at Liang Court, my colleagues and i used to go over to Hill Street FC for dinner and we have a challenge among ourselves who can down the most plates of this CKT.
My record was only 5 plates. The winner could down 10 plates :)

ya.. this is one of the best CKTs around.. the only reason i dont eat CKT more often is cos of its very unhealthy reputation....

We're thinking of going to Big D's tonight. Now, we're definitely heading that way. First to Big D's, then to Hill St CKT!
I just ate it yesterday! haha. Well although I work very near to this stall, I limit myself to no more than 1 plate per month. Must live longer to enjoy good food. But I do agree that this is probably the best way to die. LOL.
It is really a pity seeing good hawker food die, and the death of good hawker food is usually caused caused by 1)no younger generation from the family to take over; or 2)the younger generation taking over modified the formula for higher profits/less work.
Maybe tourism board, national heritage board and NEA should join hands in do something to encourage the passing down of proper hawker food.
And I do agree that "The Hill street CGT is a true gem. It should be nominated for UNESCO heritage."
They close quite early, so it might be good to go CKT first!
Good idea. Share a plate of CKT, then go Big D's to slowly decide on what to order and wait for the food to come without hearing the tummy rumble.
That was more than 10 years ago Sumo. Now, i limited myself to CKT only about 6 times a year max cause it's hard to find good ones here in Singapore and i don't wanna waste my calories.
But the story changes when i'm in Penang. I will have it everyday without fail during my weeklong break; with extra taugey and duck eggs. can't think of a better way to get your arteries clogged :)
For once, I must agree that THIS is, really de BEST CKT I've ever eaten... No one comes close, ever! Oh yes, must go by 4pm coz u wouldn't want to be disappointed. Oh yes, de other thing is, when u r at dat FC, from dat CKT stall, take a walk leading de Big D's kopitiam but not out of de FC, and turn to ur right and to de very first stall which sells Bao.. wa.. de lianyong n redbean bao is heavenly! Try it!
Hmm..I don't really find this CKT appealing to my tastebuds, but I can see why a lot of people would call this their best CKT as there is a very strong aura of Wok Hei surrounding it and the kway teow is fried evenly together with the other ingredients...
Not really a CKT person, but I stick to Yong Huat at East Coast Road, or Jago if I do have that seldom craving of CKT.
I would give it a 4/5...and thats for a non lover of CKT...

I brought holybro over to Hill Street after Big D's that day and was so excited about introducing him to the old man's legendary CKT. Initially, a lady was stationed at the wok and I thought 'oh no, not the same'. But luckily the old man returned from his break to helm the wok once again and we were left anticipating.
Alas, I left a lil' disappointed. Somehow I felt that the day's CKT was a tad too dry and lacking in flavour - the very first plate of this CKT I had way back was laden with bits of lard and was so aromatic and bursting with flavour - I admit, I had to ask for extra lard just to relive that experience.
Maybe my tastebuds are being accustomed to moist CKT and veering towards the savoury side of things now... I would say Peter of Jago's (who just recently relocated to the kopitiam directly opposite the FC) can offer an alternative style to Hill Street.
Not bad though, two different and popular CKT in the same vicinity. Plus the addition of Big D; and the perpetual queues for the cuttlefish kangkong, fishball noodles and 'hei' (prawn) mee still persisting...Good for Bedok and the East! =p
As of now, my fav CKT that is still etched onto my memory remains that of the old Newton @ Serangoon Gardens FC. Wonder how the old couple is doing now...
Holydrummer, I bet u stay close to Marine Parade for the wet CKT at Marine Parade HC; that's the wettest I have came across. Used to like Hill Street CKT when they first set up here but now jelak and take occassionally. I am sure there is one more CKT at that HC and yet they survive with HSCKT around. However Peter@Jago says that too much traffic diverted to HC and there's lesser crowd at coffee shop. If only he sets up shop at HC, that wud be interesting for 3 party fight; HS famous CKT, Jago's opeh style and the ordinary CKT. Anyone can suggest to Peter?
Definitely overated. For those who still don't know, this stall actually whips up the Singapore version of the 'Penang' Char Kuay Teow.
How do you distinguish Penang CKT from the a non-Penang one? Easy. Penang one is a little dry. It is not neither that sweet nor salty, just enough for you to taste the other flavour of other ingredients. It normally comes with a little 'chao tar' smell. It has chives. It will be served on banana leaf.
This is perhaps the best in Bedok but not the best in Singapore and if you have time to pop over to Malaysia, even just JB, there are some that can already beat this stall hands down. This stall is only fantastic if you have never go to Malaysia to try the real stuff.
My fav I do travel from north all the way there.I did came across about twice the standrad bit down of the hundred times I have eaten since Hill St days.I know what he can so once or twice his standrad drop doesn't discourage me from going there. When the lady does it I'll wait till man comes back before I order.
Alfred, when you make a statement like "not the best in Singapore" people expect you to then tell us which is the best in your opinion.
At any rate, I never said it was the best in Singapore. I simply said that it was the best I have eaten after tasting the few Char Kway Teows everyone always talk about.
Let's just say it is the 2nd best in Singapore but I have yet to find the best.

Hi Alfred, i do concur with you that our foodies in the North definitely have a better deal when comes to CKT.
In Penang, at least i can vouch for it, any CKT stall or at least 90% of it can beat this Hill Street CKT hands-down. No doubt about it or they would not even be in business as Penangites are very fussy about their food.
But we are in a totally different planet here and have to make do with what we have - and the closest we have to a great CKT is the Hill Street one.
Perhaps you can share with us where is the best CKT in Singapore. Would love to hear from you :)
I think this char kuay teow is a abit too wet and oily for my liking though it has got a good flavour.
Good for Peter@Jago cos they need to make a living and TPFC has the traffic. No wonder twice in the morning last weekend, they did not open their stalls.

It's called Hill Street CKT and not Penang CKT and both are totally different version and taste, otherwise it would have been called Hill Street Penang CKT. Yes Penang CKT has a class of it's own and until today I could not find the stall that left Bedok that was opened by Penangites despite me taking down their HP before they left. Do u know of the best PCKT in town? Wud like to try.
Leslie, i say the best is also in my opinion, just like you said delicious also in your opinion. Lets not go into a debate on opinions. You gave yours and I gave mine. Fair game.
But I know the bedok one is not the best in my opinion. It is only good compared to the others because it is a 'Penang' variation. 'Penang' variation will beat the 'Non-Penang' anytime in terms of flavour and balance.
Even for a Penang CKT Why I say it is not the best because there are many penang Char Kuay Teow that is on par with it. There is one in Newton which is quite good. There is also one in Bukit Merah also quite good.
But all in all, they will lose to our counterparts across the crossway. If you're a frequent traveler of JB especially via the 2nd link, you would have passed by this small town called Pekan Nanas where there are many food stalls by the road side, look for a kopitiam that says 933 coffeeshop. That stall will be the closest thing to the real Penang CKT.
You think it is the best only because it's is a Penang style which always beat the local version. The local version is the sweeter type and it is wetter, and it doesn't has chives and it definitely doesn't serve on banana leaf. Learn how to distinguish before you want to compare it.
damien : Penang ckt is always good. It is about there. You go to any kopitiam in Malaysia, the flavour is about there. They don't use a lot of thick soy sauce and they fried until very chao ta. The flavour is there in the bedok one and I didn't say it is lousy but it is just very normal if you know it is a Penang style.
But if you have not tasted enough Penang style CKT to have a proper sense of what is it all about and then go about comparing this with the local version, then you will find it super duper extraordinary because by nature penang ckt already has an extraordinary flavour.
jencook : The flavour is technically a Penang style CKT. It's just like I sell to you minced meat on fried flour and tell you it's a pancake without telling you it's a murtabak. Or i put tomato, cheese ham and sausages on bread and sell to you by baking on the spot without telling you it is pizza. It doesn't matter what I tell you, if you can recognise the flavour, then it is what it is. If you can't then go ahead and call it whatever and say it is the best.
If you look at the pan you will see the the CKT is no longer good. Anyway I think this is over-rated even during the days at Hill Street.
BTW a good Teochew CKT does not need the addition of lap chiong & fish cakes for flavour

There are so many CKT sellers here who have their own recipe and still manage to keep people coming back for more even though their CKT is of LOCAL flavour. Who are you to say that their CKT is no good SIMPLY because it is not a penang variation?
It is your own opinion that you think that Penang CKT will always be better than our own version...We all have our own 'best place' of CKT which we frequent, and it is not necessarily Penang based.
You might have tasted both versions and might find similarities in this Hillstreet one, but it is unjust for you to say that this one is good JUST BECAUSE it is similar to Penang CKT...
So if you think that our local food is not good enough for you to satisfy your cravings, by all means, move up north...
And incidentally, Malaysia food is NOT THE SAME as Singapore food...We may be neighbouring countries and we might have some similar food due to geographical location, But I'm pretty sure there is some food in Malaysia which cannot be found here in SG and vice versa.

This char kway teow is really great! My all time fav. too! Another one that I thought it's good is the T2 Staff Canteen...although the quality may "fluctuate" occasionally but most of the time it's still good, esp. the fried tung hoon...try, if you can.

wahcow: The TWIT says there is a Penang hawker buffet at York Hotel now. :) There's Penang Char Kuay Tiao from Penang, Penang Rojak from Penang, Penang Laksa from Penang, Penang Prawn Mee from Penang, Penang Lok Bak from Penang, Penang Chendol from Penang etc. $23.80 and you won't need to move up north. Just move your butt to White Rose Cafe, last day tomorrow. :)

Even if you compare so far away as Brazil, note that I was once invited by Brazilian Airline to visit Rio, Recife, Salvador, Sao Paolo and I have tasted their Chinese food; thank God there was Chinese food altho the Chinese owner still speaks Spanish and not a single word of Chinese. Sama sama lah.
I have also travelled to Penang too eat the Penang CKT; Like I say it certainly has a distintive taste to it, oh am I dreaming of going back to Penang to eat again.
i see some argumens about whether PCKT is better or the LCKT is better and have claims that HSCKT is better because it is a PCKT (which I disagree, btw). very soon this will boil to a war of words between PLaksa and LLaksa (well, KLaksa includede).
And we will have WWIII as per predicted by a student a few years back.
Cut it out! There is no point arguing which is the "best of the best" because hawker form, personal preferance play too important a role in all these. We just need to know the author of the blog likes this food and he is recommending it to all. Period.

That's exactly the whole point of this blog...no point even trying to compare which is better because at the end of the day, we all have our own personal preferences...Some of us may like PCKT, others our own local CKT...There will never be a universal agreement on food in general...Life would be boring if we agreed on everything...

Think you might have misconstrued what i commented.
Hill Street CKT and Penang CKT, albeit very similar, still have that distinctive difference in terms of taste etc...
What i meant, in general was that most of the CKT stalls in Penang, is much better than the Hill Street version, IMHO and that i preferred the former :)
Forgot to add Jencooks, that i still have not found a PCKT stall that is reminiscence of those i had in Penang.
There is a stall at ABC market though selling Penang Food, formerly from Amoy Market that fries a pretty good PCKT.
Can give it a try :)
Interesting point to note is that most of the good CKT stalls in Penang are manned by ladies :)

Anyway, I haven't been to Penang for many years so I haven't tasted Penang CKT from Penang. I always wonder why, if so many hawkers there are so good with the CKT, why not just sponsor someone from there to come fry KT here? So difficult to do meh? Especially if it is so ToK Kong, why don't more hawkers here fry the Penang style?
From what I know, the Penang style CKT is not has sweet so the Hillstreet version does not really qualify as Penang style since they do use quite a bit of sweet sauce.
Jago does three version, one is closer to the Penang version where he uses no sweet sauce.
I believe York Hotel gathers the hawkers of Penang for an occasional Penang buffet.
Penang CKT must be fried over charcoal for that intense flavour and i understand NEA has strict rules pertaining to the use of charcoal fires.
Thus, even if someone brings the best CKT chef from Penang, the taste might not be similar :)
So no choice but to head up north for my yearly PCKT pilgrimage.

Indeed, the Hill Street CKT is really good! I ate on Friday and yah, that's how I remember it as a schoolgirl eating at the stall in Hill Street donkey years ago.

Well there are some hawkers who are pretty rich, but most are just making an honest living. I know of a few quite well known ones who are living in HDB flats and driving corollas. It is those restaurant owners who are zipping around in Ferraris.
Due to health conscious, I have not visited the hawker centre, kopitiam, food centre for many years, but sometime can not avoid, I just eat the simple dish or at a reputable one.
I follow the recommendation and tried this CKT ($3), taste is good but I will not try again, unless I bring friends or family if they have not tried this before.
I have tried the Penang Char Koay Teow at Penang Place, this one I like a lot, must try! Got curry chicken etc...

After reading the ieat posts, there are more hawker stalls or places that I’m interested to try out myself in the future. I use GPS to find the place, but usually the address here does not have the postal code for easy search, so have to key in the road name...
Yes I know about the request for postal codes. Now that I know it is useful for GPS, I try to include it whenever I can get hold of the hawker's namecards.

the chives and the beansprouts really brought it to a new level and i love the "blend" of salty and sweet flavours. really good. finally went there coz needed to do some stuff in tampines. soyup.

I just have a CKT at Jalan Batu Hawker Centre, was recommended by 蔡澜,stall 01-04, opposite is patrol station, 天香å›. May be I long time didn't eat CKT, the taste no much different as compared to this Hill Street. Cheers!

The CKT at Havelock Road is called Meng Kee, very popular with the people working nearby and the residents of Beo. They sell CTK in the morning, black better than white. This stall is very underrated. Worth to check it out. :)

Happened to just eat it today! Hit the spot again! He has agreed to teach me how to fry the Char Kway Teow one day!

First he won't teach you everything. Second you won't be able to whip it up at home even if you know how he does it. Simply because you won't get the kind of fire using your normal gas stove. Same like you won't get the same kind of flavour in hor fun if you cook at home. It require extreme heat and pik pik piak piak to hit the right note.
Heck, you won't even get the same fire to cook your steak at home as compare to restaurant. So sometime it is not a matter of knowing how but a matter of for $3 you can get it at kopitiam, worth to whip it up at home or not? Chances are you need to buy beansprout lah, mee la, kuay teow lah, lap cheong lah, ham la, chives la, hahaha dont tell me all this gonna cost you lesser than $3 hor, since you need to get some of the items in big packets. Forget it lah, pay $3 all problem solved. : )
No, I am not intending to fry it at home. Just for the sake of wanting to learn the skill of frying so that I understand how to make a good Char Kway Teow.
Leslie, when you are free one of these days, let me take you to JB to taste some fantastic CKT. But let me warn you that you might come back and look down on our singapore CKT forever.
Also Bakuteh. You know what our malaysian say about our bakuteh? they say we should call it the pepper pork soup.
Also peng gan stingray. The chili they use is really chili with all the 'pok' and grinded in with all spices and loads of onions in it.
The best food is over the causeway. Singapore food is really very jialat. Oi sai toi, boi sai jiak. Jiak boi lok.
So when can we try your version of Hillstreet CKT :)

After I read the comments here, I tried Meng Kee CKT at Blk 22 Havelock Rd’s Wei Xuan Eating House last Saturday also; taste good but oily, it is wet type as compared to Tian Xiang Yuan CKT at Jalan Batu Hawker Centre Market which is the dry type, both also have the猪油渣 which make the CKT more tasty. Worth to try it out.
After eaten the CKTs from Hillstreet, Tian Xiang Yuan and Meng Kee, now think about it, I more prefer the dry type from Tian Xiang Yuan, will try one more next time when I feel like to eat CKT again. But will eat this Hillstreet one also if I’m nearby the place. :)

Don't think so that he uses vegetable oil as far as I know. He's added something in the sweet sauce but I can't taste it though I know what it is. The fire is not very strong because not many can take it, frying with high fire for the whole day. He's been frying plate by plate all along, from the roadside stall to Hillsteet FC to now. I've not eaten this fried kway teow for more than a year. When he fries it well it is very shiok but when he doesn't it's quite average. Like many others, consistency is lacking. OMG I love this CKT! Again, Hubby and I always have very different opinions on food. He didn't think it was that great and lamented he hasn't tasted a fantastic plate of CKT in his lifetime. However, we both didn't like the one from Margaret Drive though. I really wanted to like it too coz that's where I grew up (dunno why but I never tried the CKT in all my years there tho) and lived for about 25 years before moving. The stall owner was super nice though but his CKT that day was kinda tasteless. I wonder if it was just a bad day... hmm...
Will give it a try again... and really looking forward to trying Meng Kee!
Try CKT at BLK 132, jalan bukit merah coffeeshop. Not only Char Khay Teow nice, fried prawn noodles(Hokkien Mee) also yummy there.

I ate there today, and was very very disappointed. The kway teow wasn't as moist as my fave kway teow, and I couldn't taste any chili at all (i requested for chili). It was very bland, even thought one of the upsides was that there was a lot of hum. Given that you don't award high ratings very often or easily, I expected it to ate least match up to the other char kway teows I've eaten before. Also, the portion was less than my fave.
Visited some friends at TJC last Thursday and tried this as well. There was almost no queue (waited maybe 10-15 mins) as I went around 1330. The portion was a little small, but it was well-fried. I would've liked a bit more chilli, but all in all I was still quite pleased with my CKT! :)
