This is my idea of what a great char siew should be like. Thickly cut, tender, marbled and juicy meat with nicely charred and caramelised bits of fat on the outside. When you bite into the char siew, not only should it melt in your mouth, but, at the same time you should be able to appreciate the smell of smoking charcoal. Char Siew doesn't get better then this!
For those who are inversely horizontally challenged (ie watching your weight), do not despair as you can have a choice of both lean and marbled versions of char siew.
The Char Siew is dipped intermittently during the roasting process in this marinade of soy sauce, sugar, oyster sauce and tau chio (salted bean paste) to ensure that a thick, translucent, caramelized layer coats the outside of the Char Siew. The importance of the cut and source of pork cannot be underestimated. Fatty Cheong uses only pork collar/shoulder meat from Brazil. This cut of meat has good marbling and level of fat to ensure that the Char Siew comes out tender and juicy.
Ever wondered what a Char Siew Sauna er.. Oven looks like? Charcoal ensures that the pork gets that characteristic flavour. Don't bother to do this at home in the oven, it is never the same. By the way, I learnt that the process of making Sio Bak is amazingly simple. Pork Belly is marinated in salt, sugar and five spice powder for just over an hour and placed into the oven. Mr Cheong assures me that that is all that is needed to make the skin crispy.
Ta Da! Beautifully charred Char Siew fit for any five star restaurant.

Now you know why the shop is called Fatty Cheong? Well it turns out that it may be a case of self fulfilling prophecy. When Mr Cheong started his shop 14 years ago, he was still a slim young man. I think he must have chosen the name Fatty cos he used to be an apprentice of the famous Fatty Ox HongKong BBQ. Since then, he has tweaked his Char Siew formula to suit the local taste. I must say that the disciple has a better char siew then the master, although Fatty Ox's roast duck is still number one.
Conclusion
This is easily one of the best if not the best Char Siew in Singapore, and very reasonably priced. Certainly the current number one Char Siew in the ieatishootipost Char Siew Challenge. The Sio Bak and Roast Duck are both very good but it is the Char Siew that just has that extra something to keep you salivating while trying to get to bed.
4.5/5 Currently World's 2nd Best Char Siew (We are still looking for the World's Best).
PS: At this stage, I must say that I have tasted a couple of great Char Siew that all rank very close to the top five best Char Siews. My feel is that at the end of the day, there might be a few which would have to be crowned World's 2nd Best. We'll see. Another thing, to enjoy really good char siew, you need to have at least a little fat. If you take it lean, don't expect it to be that great.

char siew, roasted pork and roast duck very high std.
however, noodle and rice tasted yakky with the gravy which has a very herbal tong kwai taste.
seriously i of the best charsiew i've ever had! lol your site is on the stallowner's namecard. think he's proud to be mentioned by you. cheers! since i work at HP i eat there quite often.. love the roast pork too!
Had them yesterday....don't mind having it again tomorrow....and maybe the next day....will time myself to be there when its hot off the oven.....
Tried their char siew yesterday. BTW, they opened at 11am , not 10am.
Still prefer Fong Kee in Toa Payoh which uses better quality rice and no herbal Tong Kwai in gravy.
But Fatty Weng is cheaper.
The best cut is the pig armpit, which you must request. It is more fatty so you can't eat too much. It's fatty Cheong, not Weng. Changed the time, thanks for the tip. Will need to check out Fong Kee one day. What's the address?

P/S : I got very lean char siew from Fatty Cheong.Maybe thats the reason it was not so nice.
Tried this tonight. Agree that it's easily one of the best char siew I've ever had. But for a more succulent taste, recommend the "fattier" cuts. The lean cuts can be a bit dry (which is to be expected from anything that's roasted/barbequed).
You might want to try Foong Kee on Keong Saik Road. It has good char siew too.
I tried e char siew. Didn't tasted too good. But the sio bak is a better. Would ask pple to go for the sio bak rather then the char siew.
Did you ask for the pig armpit ie the fatty charsiew? It makes a world of difference!

beside char siew, u can try their duck rice. very nice also. request for more gravy as their gravy is gd too. and i noe uncle cheong personally, he gt very gd service too.. should try
The char siew is one of the best I have tasted in Singapore.Requested the 2 ladies I want armpit but they dont understand neither can I speak in dialect for armpit. Guess she understood when I said more fatty one.The duck and roast pork not bad too. Char Siew 4.75/5 duck & roast pork 4.35/5 my rating.

To me, one of the best charsiew/siew yoke stalls in singapore. right amount of fat and lean meat in their charsiew, sweet and nicely roasted -all done onsite. Siew Yoke also v crispy.
Go in the mornings around 11am. try and see...
I tried it! It was good ! Thick! Good quantity! gravy blend well too. we ordered 2 plates of char siew rice and a bowl of sui gaw tong, only $7.50. Value for money!

What do you guys think about the char siew from Kay Lee Roast Meat Joint at Upper Paya Lebar Road (near Little Road)?
The char siew and roast pork were quite impressive, although I would prefer the char siew to have a tad bit more honey on it to give it the extra ooomph. The overall package was dragged down by the soggy rice, other than that the gravy, chilli and roasted meat were quite brilliant.
I agree with Alan. Fatty Cheong should change the quality of his rice.
Brought a couple of friends to Fatty Cheong for lunch today and it was great. I had tried his Char Siew, Sio Bak and Chicken Wings before and they're great.
Today, we had the Royal Flush- Char Siew, Sio Bak, Sio Arh (Roast Duck) and Pork Ribs. It was a wonderful meal and we washed it all down with Prawn Dumpling Soup.
We rated the roast meats in this order-
1. Char Siew
2. Pork Ribs
3. Sio Bak
4. Sio Arh

sounds good. looking forward to try. so far the best i've tried is the one at taman jurong and you have to be quick! they start selling at about 11am and by 1pm they're sold out. recently, i went at 1215pm and its all sold out!! its that good
