Ah Liang Fried Hokkien Mee: Does Tar Pauing make the HKM tastier?

Do you think that wrapping the HKM in Opeh leaf improves the taste of the HKM? Or does the image of the Opeh leaf somehow invoke some nostalgia and affect the taste? Some vendors tell me that they feel the Opeh leaf does nothing to the taste of the noodles whiles others feel that the best way to eat their HKM is to leave it in the Opeh leaf for 10 minutes before eating.

This particular HKM stall told us that the best way to eat his HKM is to wait for all the flavours to soak in for 10 minues in the Opeh Leaf. OK, so we Tar Paued a packet of HKM and waited 10 minutes at the hawker centre to eat it. I had a few mouthfuls before wrapping it up so that I could compare the taste.



When we finally opened the packet, most of the gravy has been absorbed by the noodles. The Hokkien Mee here is quite decent, but still lacks that ooompph. The stall does not provide crispy pork lard though they admit that the vegetable oil used to cook the noodles was prepared with a small amount of pork lard. 4/5

It is hard to tell you what Opeh leaf actually taste like. To me, I think that if I really really have to say, than maybe it imparts a subtle woody taste to the HKM. But it is very very subtle. I think that it is the fact that you give the noodles time to soak in the flavours that makes the bigger difference to the noodles.

Conclusion

A good plate of HKM to try when you are at Marine Parade Food Centre. You'd appreciate it if you are health conscious. But I still maintain that HKM without the crispy pork lard is like an elephant without its trunk.

I am sure the opeh do enhance the flavour the HKM just like Banana Leaves to certain food.Yes the crispy lard also help in the HKM but unfortunatly Ah Liang dont have it (he claimed he thrown them, what a pity.

I find that the wet hokkien mee taste like Nam Seng's better when ta paoed, as all the wet stock will be absorbed into the mee, but you get a soggier noodle.

HKM these days lacks the oomph coz they left out the slices of boiled Sum Zham Bak (pork rashers) and unlimited supply of pork lard.

Darn... who cares about health man. You gonna die one day.. either earlier or later =P

I totally agree... the more unhealthy it is....the nicer it taste... and I believe there are many foodies out there that will agree to it... ;)

I like HKM with lots of crispy pork lard too! plus a some "slices of pork" would be even better.

The hokkien mee looks like it has not been fried long enough leh.. compared to ABC Market's hkm

I find Ah Liang's overrated. You should try the HKM located in the middle of the same hawker centre. It's next to a stall selling chwee kueh/beehoon. The HKM here is more flavourful.

not sure if this is nice. there s one stall at geylang selling charcoal cooked hokien mee. Thats really nice! I am not sure if u all will get sick of the hk mee taste aft eating halfway. i can finish up and ask for more at the geylang stall. lor 30 plus i think

Strange but true. The best Fried Hokkien Mee I've eaten is actually found in an army camp! Nee Soon CCO canteen (used to be known as 6 Div Canteen).

i agree that the hokkien mee at neesoon camp 6 div canteen is really not bad.. i favor this over the nam sing 1(nam sing 1 i dun like at all).. the uncle does a mean hokkien mee , can be soggy or drier if u like.. usually its soggy and i like it that way.. u can request pork lard from the uncle also..

Ah Liang has been closed for several weeks now, as in closed, moved. No more good HKM at Marine Parade area?
