Big D's Grill: Coffeeshop Kurobuta, Wagyu and Kobe

With Food Guru

Kurobuta Pork Chops $36

Oh yes, we are seeing more of the good stuff hitting the coffeeshops!

My latest find is this coffeeshop stall which has started selling US Kobe Beef Ribs, US Kurobuta Pork Chops and Wagyu beef done mediterranean style. Now, there are many Western food stalls which are opening up in coffeeshops so I usually have to look out for signs that a particular stall is offering more than just your run-of-the-mill Dory fish and chips, NZ steaks, chicken chops etc.


Preparing the grill with beef fat

You know how a lot of times you just get a gut feel about things? In fact, a lot of decisions in life are made based on gut feel. When it comes to people, women tend to have that special ability to size a person up in just a blink of a second. It's the same thing when men look at a BMW and know that they are looking at quality. In fact, it only takes one glance to see quality but it takes time to try to describe what actually makes a BMW look more "solid" than a Geely. (Yeah the Geely has taken over from Hyundai as the budget car)

So it is with Big D's Grill. I had a good gut feel about the stall just within the first few seconds of looking at the place. Then I started listing out the visual cues. Big Eurasian Man wearing a biker T and jeans behind the grill - TICK. Array of different restaurant style pans hanging above the stove - TICK. Big sticker declaring "Angus Beef" - TICK. The words Kobe, Wagyu and Kurobuta, TICK, TICK and TICK. Big D (Damien) oiling the grill by rubbing a piece of beef fat on it, TICK times ten plus an A*! It is quite obvious that Big D is really serious about providing good food!

Another obvious cue is the standard of the side dishes. Coleslaw and French Fries are dead giveaways for the run-of-the-mill "Hawker" western food. Thankfully, Big D's provides a wonderful selection of sides with a heavy Mediterranean influence. The Pinto beans and Spiced Sweet Potato and Pumpkin Mash were excellent and really got my tastebuds tingling. And the Kurobuta Pork Chops did not dissappoint either. They were wonderfully tender and had that charred mediterranean spice taste. The pork was flavoursome without that "porky" smell that pork can sometimes have. Now, $36 might be a little pricey for a Pork Chop but it is cheap for "Kurobuta" which are usually more than $40 in restaurants. 4.5/5


Pasta with Anchovies $17

Big D's pastas are also well worth a try. His Pasta with Anchovies is a relatively simple dish but very well executed. The pasta was perfectly Al Dente and the freshly chopped herbs are again a pleasant departure from the usual "McCormick" dried italian herb mixes that most Western Food Stalls (and even some restaurants) would use. I am not a big fan of Anchovies, so I did not appreciate this dish as much as someone who is. But judging from the way it was presented, I would be coming back to try the other pastas that they are offering. 4/5

There is a good reason why Big D's is called Big D's. That's because owner and chef, Damian D'Silva looks like the kind of Cowboy you wouldn't want to mess around with. An Ex-Aeronautical Engineer, he flew off on a whim (at age 42) to spend 2 years working in kitchens around Southern Europe in order to pursue his interest in cooking before coming back to Singapore to work at several European restaurants before he opened the now defunct Soul Kitchen at Purvis St.

I am telling you all this because it is not easy to find a chef-owner who is passionate about food that is willing to open a stall in a coffeeshop. And the best thing is that since he is in a coffeeshop, he can keep rental cost down and serve quality food at great prices. He is quite fussy about using only chilled meats and freshly chopped herbs and doing stuff from scratch, such as his steak fries which double fries himself. This is a man who really cooks rather than just another person hired to grill a piece of meat and serve it with re-heated veggies.

The only thing I am concerned about is whether he is able to churn out the food quick enough for a crowd and controlling escalating food costs since he is insistent of only using imported stuff like Spanish Anchovies. Apart from that, I think you can be assured of getting something quite special out of his kitchen.


Bonet $4

Don't miss out on Big D's homemade desserts. Bonet may be a simple homestyle Italian Chocolate Pudding with Caramel Sauce poured over it, but simple things executed well can be marvellous, just like a perfectly cooked omelette. For someone who isn't really that big on desserts, I actually enjoyed this very much. It's almost like a Chocolate version of Creme Caramel and is so smooth that it slides easily down the throat leaving a wonderful chocolate aftertaste at the back of the palate. 4.25/5

Conclusion

Big D's has that maverick Roadhouse Pub kinda of character and my first impression is that it could easily have been set up in an old shophouse somewhere in Siglap. We did not managed to try a lot of their other stuff like the Beer Battered Fish and Chips made from Snapper fillets ($8.90) or the US Kobe Cross Rib ($40 for 200gm) but judging from what I had, I'd say that Big D's Grill is well worth checking out if you are hungry for some excellent European Food cooked with character and passion without the +++.

Anyway, can coffeeshops sell wine? Because I think a lot of people will appreciate it if they could order some wine to go along with the meal.

wah.. e first thing tat i noticed is e alluring fat on top of e kurobuta pork.. *slurp slurp*

but a look at e price again.. it wun be something i'll eat frequently in a hawker centre/coffeshop environment..

i'll probably try it once though! =)

I love Damien's unique blend of Peranakan and Eurasian food at Soul Kitchen and am real glad he's back, albeit serving a different cuisine :)

Not sure about needing a licence serving wine in a coffeeshop but i couldn't get a licence to sell it in a hawker stall.

Reason given was that there was no such precedence and even after I appealed for them to look into this matter stating that this suggestion might lead to an influx of new generation hawkers, they turned it down, simply again because there is no such "precedence".

I wrote in a third time requesting for a reason and they simply replied that because the alcohol level of wine is much higher than beer, it could not be sold in hawker centres as social problems pertaining to underage drinking might arise.

On the hindsight, IMHO, i seldom see youth bingeing on wine to get drunk :)

At the end of the day, i think they do not want to inconvenience themselves of implementing a new rule.

But i guess could still BYO :)

Yeah, Damian's quite well known in the culinary circles. I think a lot of his fans will be glad that he is making a comeback.

I am trying to see if we can organize a degustation session for the kakis to try all his dishes.

I think I might have found Singapore's best kurobuta loin...


My god...today I went to Bedok at about 1 pm. Curiously I stepped into the coffee shop, ordered a glass of Teh C, and went to take a look at the stall.. I saw a whiteboard filled with their prime menu...words like Angus, Wagyu and Kurobuta really caught my attention...

So I ordered one kurobuta loin..served with Pinto beans and Spiced Sweet Potato and Pumpkin Mash. He also threw in a special sauce which complimented the meat well..

When I cut open the loin, I was happy to see that the meat was still pinkish, a must have in kurobuta...and when I sank my teeth into that fleshy, meaty and oh so delicious pork...I was in heaven for a few seconds I tell you!

The kurobuta tasted exactly how pork should be...not exactly tender, but full of bite and flavour...and an added bonus when I chewed onto the fatty parts which was so juicy..and best of all, it did not have that "smelly pork smell"

I spent the next few minutes savouring that beautiful piece of art and I left a pretty big piece for the last bite, in which I just popped it into my mouth and spent a good 30 seconds exercising my teeth and tastebuds!

Damian came by later and asked how was my meal, to which I replied: perfectly done well...Meat is tender and pinkish, full of flavour...

The sides did not disappoint me too, despite the fact I was not into beans or pumpkin mash...

I was so impressed I ordered 2 sets of beer battered fish (snapper, not typical dory) to takeaway for my bro and I.

While preparing, they served up the free bonet (I did not ask, as I was wearing the ieat T-shirt)

The chocalate was good, bitter sweet...went pretty well with the sauce...though I did give my feedback that the sauce could be a little thicker, coz it tasted like cane sugar syrup, and not exactly caramel...but it is still very decadent, and pleasing to the palate.

After which Damian handed me 2 packets of piping hot beer battered fish with his homemade steakhouse fries...1 set for $8.90

I walked home a happy man today, and I might just go back later in the late afternoon with my bro to tackle his wagyu again.

I am very very satisfied by this meal, and I give kudos to Chef and owner Damian De Silva for placing great emphasis on quality so as to give customers the best food at perhaps not cheap, but certainly reasonable prices..

woo.. kurobuta is good stuff, but at $36 in coffee shop is really kind of expensive? and pasta at $17 isn't really cheap either. but if you are not looking from the "coffee shop point of view" then i guess its all right, otherwise must think twice before going.

So near my house I didnt even realise such a Westerm gem exists so close by. Must try this weekend tho his face looked so familiar. Must have seen him when I ate at Peter@Jago and must have just concentrated on my CKT.

Holybro, was at Ya Kwang a while ago and heard your famous name being mentioned. My gosh u really have deep pockets but glad u savour every bit of the kurobuta loin.

Just tried his angus steak + the free promo ieat chocolate desert. The steak was done just right,the black pepper sauce was in a class of its own & the free desert send me to heaven with the rich chocolate taste which was contrasted with the fresh blueberry.
The only complain I have is the fries were a tad salty.

Just lost my message, here's again.

Just got my maid to buy me the Bonet at $4.50 for tapau and Oh my GOSH it is so SO HEAVENLy and it gets wah WAH Wah from a few mouths that tried it although it is really small. We got strawberry instead of blueberry.

It is a surefire killer dessert. My sons said he wants to buy it everyday, see liao.
For anyone going to try, it's a not to be missed dessert. I have never tasted anything like that..

moohahaha..i was there last night at around 9plus....the pork chop is good !!! although a little expensive at 36 bucks... they ran out of the dessert though.

saw another group taking pictures..2 or 3 dslrs.... nice !

I vouch for the kurobuta loin. Best I've tasted so far.

Big D has potential to draw the masses in. Great food and personalized service. One of the staff, Nigel, was nice to ask of the food's quality i.e. 'How's the food... Enjoying your meal?' -

Think that more than covers up the lack of promptness in service - I am not very sure about their time management with a big crowd. More room for improvement on this area.

But, barring that, Big D's Grill will be here to stay for a long while and I hope they do.

thanks for the recommendation! i think this place truly outshines astons in that they put in a lot more thought to their side dishes. the coleslaw, mash, pinto beans, tomatoes in olive oil, anchovie butter... it's pretty much restaurant standard fare in a hawker centre. i really appreciate the effort.

i thought the kurobuta loin was great. although maybe they could trim some of the excessive fat off.

i didn't think the wagyu is worth it's price tag though. Granted 40 bucks for 200 g isn't all that expensive. But it doesn't taste all that wagyu-ey for a wagyu steak either. I found it rather dry and tough actually.

And anyway, taking a break now from food also...coz I just recovered from a fever and cough...fever reached 39 Degrees celsius..Les had to give me a strong antibiotic to curb the high temperature...

But once I get well again.....heheheheh..

Anyway, if the big d degustation was at night, would you be able to make it?

Went to Big D today, yes the kurobuta pork was really good, juicy and tender but a little bit too salty for my taste bud, what was really good is the dessert bonet that i had for free because of the ieatishoot promo! For someone who does not have a sweet tooth, I really really love the bitter sweet chocolate pudding!

Haa i wish i could join you guys for degustation, but a bit shy la ;P

Just went today, lunch time. But last night was a very busy night so most of the specials were sold out and some of the dishes on the a la carte menu as well (maybe because of all the publicity from the BT weekend article last week). Ended up having a grilled pork loin - the pork was juicy, nicely marinated. The mash potato was excellent and it was interesting to have the purple cabbage coleslaw.

Try the "$38" black pork chop and fish n chips last week. Was good but will not go back again unless they cut down on their MSG. Both my wife and myself felt it in the middle of the night as we woke up feeling very thirsty.

Had the kurobuta yesterday. Amazingly good. The charred, crunchy exterior contrasted with the fleshy,chewy interior was fantastic. The sides were so refereshing. I live so near and yet had no idea that such a fantastic store existed.

Will ask for the ieat promo the next time round I go there.

Hey guys, Nigel here.I have been reading all the comments with great interest and on behalf of all at Big D's Grill, i'd like to thank everyone on their honest and unbiased opinions. It is really nice to hear feedback be it positive or negative because we rarely have the time these days to interact with customers the way we'd like to and garner their opinions.

Although our food cost have gone up considerably,the Grilled Korubuta Pork Loin is still priced at $36, however when there is an excess of fat on the loin we tend to lower the price to $30.

We do put an enormous effort into preparing all of our dishes, meats, sides and sauces included and most times we work 13 hour days 24/7 except Thursdays when we open only for dinner at 6pm.

We do not use any Artificial Flavorings, Chicken Powder nor MSG in all and anything that comes out from our kitchen and hence the 84 hour work week.

Admittedly our food does take a substantial amount of time to prepare because we do not precook any of our dishes and therefore it does result in an above average waiting time of about 25 to 30 minutes.

Once again, i'd like to thank all who have so kindly commented on our food and who have so patiently waited for it to be prepared.

Our operating hours are from 12pm - 2.30pm (Lunch) and 6pm to 9.30pm (Dinner) Mondays to Sundays except Thursdays when we are only open for Dinner.

i have yet to try it yet.. e other day we were there, e pork was unavailable.. quite disappointed but luckily there was e bonet, buah keluak n feng to save e day, not forgetting e rest of e dishes, of course!! =)

finally tried e kurobuta pork!! it's heavenly.. it's charred to perfection on e outside, juicy n tender on e inside.. =)

bf tried e beer battered snapper & he liked it too.. e snapper is very fresh..

Hi Guys, just a quikc update on Big D's in the 'village' - a new fan!

Went yesterday for the 1st time - and I must say I was duly impressed - Decided to go with the 'famous' dishes : Crab Linguine and the Fish and Chips - And they were really good. Gf loved the pasta as it was not too liquidty and the sauce had just the right amount of tomato and a whole lot of crab goodness.

The Fish was huge - 2 big portons (though I wished they gave more fries - a personal thing - will ask for more next time!) of snapper, and this time it was done really well. Fresh fish taste, crunchy batter and super hot - well done!

Well Big D's has another Fan in me - and with this being so close to my place. I had gone to this coffee shop named 'Chang's Swallow Eating House' for years when they had this very good hainanese style western food - now it seems another kick ass place is there..so I will return!

Just got back from Big D's and the experience was mixed. Friday at 8pm is not a good time to come here, both parking and getting a table were both a challenge. Fortunately the food was not too bad, we ordered 4 dishes. The crab meat linguini was a bit too dry, but the lasagna and fish & chips were excellent... even compared restaurants that specialize in those dishes and charge twice as much. The other dish we tried was some kind of pranakan minced pork dish that looked like it had been doused in squid ink... don't know what a good one would taste like, so I won't comment.
