ROC Pizza: Almost like Cheese N Crackers!

Following up on my Hawkerpreneurs at Golden Mile Food Centre story, here is another young Hawkerpreneur that is trying to burst into the food scene by offering Cafe style food at hawker prices.

If you are hungering for your pizza fix but don't want to spend more than $8 on your meal, this might be just what you are looking for.



The pizzas here are probably the thinnest and crispiest in Singapore. It is almost like eating "Jatz" crackers with tomato and cheese. The toppings are also modest, you get your basic ham, chicken sausage, mushrooms, pineapple and seafood. None of the fancy stuff, no parma ham or freshly chopped herbs, just staightforward freshly made pizza base with your choice of topping.

I find the crispy, super thin pizza base surprisingly nice although it is not really your traditional Napoli style pizza. As I said, it is almost like eating baked water crackers with tomato and cheese. For $8 for the large 12 inch pizza, it is the kind of thing you can eat and then proceed to have an Ice Cream over at Ice Queen and spend around $10 for a lunch that might cost you closer to $20 at a cafe. 4/5

Conclusion

Cheapest way to get a pizza fix but not for those with a big appetite as the thin crust is not going to fill you up.

are people willing to pay $8 for a pizza in a Food Centre, (essentially, dough, cheese and some toppings) but not willing to pay $8for a prata sold by prata man....??

would one pay $8 for a cheese murtabak, for example?

It's funny how some people think the thinner it is the better. Just like mobile phone smaller the better, even to the point of holding it feel uncomfortable.

My favourite pizza is still the traditional pan ones from pizza hut. Whatever crispy or thin pizza that people are trying to sell is simply not a pizza anymore.

Should they charge less? I don't think they use any more dough than the average prata, since it's so thin right? You think ordinary cheese and ham and mushrooms per pizza costs more than $5? Hmmm.. I guess it is all about mindsets yeah.

For me, price is inconsequential to quality. You can have a $40 steak that taste like s**t and a $4 steak that taste very nice.

The art of cooking should be in the passion of providing good food. If it is cheap, that would be a bonus. Unfortunately it is a business and especially in a place like singapore where people hardly do a profession for passion because it's all about money in this country, hence the point of motivation for most people who go into any business is somewhat blurred.

For me, if a stall can provide excellent quality of food, charge not more than what others are charging and can still serve me with a smile, it would win my vote for the Hawker Stall of the Year award. The only stall I can think of is Char Kuay Teow at Bedok Blk 6. They are truly the icon of a real successful hawker whom is perfect in my eyes.

So for me the question to ask is are these people who come in to compete with the hawker stalls are genuine about providing the above 3 qualities. If they're highly motivated by money only, then it's not possible. If they're motivated by seeing people coming to their stall to enjoy the food filling their tummy and leaving with a smile and returning often to enjoy it all over again, then they have my support.

I think Leslie cannot please everybody. In his last several posts, he recommended carrot cake, nasi lemak, liang teh, a couple of HKM, zhar leong, char kway teow. Aren't these hawker fares? Aren't they cheap and good? I welcome a good combination of traditional hawker fares and cheap western food, with an occasional more expensive meal thrown in if it is good. Isn't choices wonderful?

I say we should just let him do what he enjoys. In his earlier days, most of the good hawker fares were listed. We can find hundreds of those. There is a very very good database and not many food blogs can top that list. Why can't everyone just choose what they like to go and try? Why must his blog be like a public listed blog where is he is answerable for every recommendation he makes?

I find some comments bordering on being ridiculous. Its fair to state your views and let Leslie or others comment. But why make references to his profession, his thinking capacity, his financial abilities, and that he is doing harm to the hawker scene?!?!? Even the director of NEA doesn't have that influence! Please be more measured. State your views but don't insinuate issues that can offend the individual. Thats a subtle way of personal attack.

Its really simple, enjoy what you find is worthwhile trying in the blog. Let him enjoy blogging his own stuff. He built his blog up as an interest and owes no one a favour. Just appreciate the effort he has put in and encourage him for the great service he has done for many, and that may encourage him to continue blogging, and all of us just click the mouse and benefit. If he listens to every diverse views, he'll blog nothing. Some want $2 fares only, others loathe cheap pizzas. Still others dislike bringing good quality food at affordable prices. Come on lah... Even Singapore cannot be governed by consensus coz there is simply no consensus. Everyone will have their preference.

Everyone should just find what works in the variety of foods Leslie blogs.

All food comes from basic ingredients and I can cook an excellent $2 dish at home with it or charge $10 outside for the same thing or put you in a nice place at $20........

Hi leong, cannot say thin pizzas are not pizzas la, the thin pizzas are italian style and pan pizzas like the ones at Pizza Hut are american style and certainly not traditional. Pizzas still originated from Italy :)

Glenda... what school of economics did you study? this is first time i hear that when there is competition among businesses, consumers suffer... if someone offers better quality food at hawker prices, the hawkers affected would reduce quality to maintain profit margins and try to win back customers?? hmm... that doesn't sound very smart to me..

and glenda, u misunderstand me. i m not questioning the value of an $8 pizza. i m just saying that we are willing to pay $20 for a pizza at Pizza Hut, but if its served at $8 in a HC, it looks cheap. whereas we are used to paying $4 -5 for a murtabak, but paying $8 for one would make it look expensive.

Aw - your is a utopia which is rare these days.. serving food for passion, not livelihood. i hope to see more of those too myself..

I can't believe my stall attracted so many comments. I would like to thanks Les for his time and effort for this write up. I jus find it strange that some are comparin my pizza to prata. Its 2 different things, and in case you are wondering, the dough i use is bigger than the one used for prata. And one thing bout western cuisine is that the ingredients cost more, therefore the price is higher. Pizza dough isn't jus flour and water, every pizza of mine regardless of topping uses 2 kinds of cheese. I'm jus a humble stall tryin to bring an Italian favorite to ppl. I salute and respect the other italian chefs in this blog who are tryin to bring sumthin which is once exclusive only to high class eateries down to sumthing more humble and affordable. Conclusion is, i can't please everyone neither can Les.

i m just asking a generic question why we are willing to pay more for angmoh food than local food.

Hope ppl will understand, i'm not in the same league as the other great italian chefs but still am tryin my best in my own craft. May be addin items to the menu still as my stall is still relatively new.

Oh please, not pizza hut! Eat to fill your stomach only and the dough is so thick!

I prefer thin-crust with a higher ingredient-to-dough ratio.

Best I've had is Timbre's, excellent thin crust and chokeful of ingredients.

Similar price, if not cheaper than Pizza Hut!

Btw, more competition mean more choices right? At the end of the day, what can that mean?

Glenda, I have tasted NTUC different variety cheap and expensive ones, I dont mind Sunhine brand which is about 6" and I have bought the 12" better ones at I think $8+. What's the point of comparison? The added value of being served instead of reheating in your own oven a pizza that is not fresh made and frozen certainly cannot be compared.

Glenda, many other blogs have a moderation system to even shut comments like yours if it is continuously giving negative feedback and personal attack.

You use words like we are hawker suckers and such, that's personal attack for whatever reasons you wish so. If I were Leslie, I will take you off the hooks for comments like that; You wanna write you write sensibly if you dont wanna write sensibly NO bloggers would welcome YOU at all.

jencooks, cactuskit & holyfamily: Remember? Do not feed the trolls. :) Discerning readers (most of us are) will know clearly who are making sensible criticisms or constructive comments vs those who are trying to create another storm here.

Why can't $8 be called hawker price? My prawn noodles cost $7 at not one but 2 places, there are even the $10/$15 options. A meal at the hawker with shared sides can cost up to $10 per pax. Prices are going up everywhere. I'll be happy to find a $5 meal nowadays and be fully satiated after the meal.

Prices are going to increase, irregardless of what this blog writes as there are many other external factors involve.

today electricity increase by 21%...will it affect our hawker food ? Even if someone starts selling higher, someone will see it as an opportunity to cut in by selling cheaper, but something gotta give.

So to all the people complaining out here, do help by listing down places that you know that has all 3 of these qualities, so that the ieat team and other readers can benefit from your knowledge.

$8-$15 pizzas at hawker centres have been around for a couple of years already - Devon's Daddy Pizza @ Chomp Chomp, Sfigato @ Ang Mo Kio Ave 10 and and Beauty World FC etc...

If you do a Google search, one might be able to find more.

Such stalls provide an avenue and alternative for people who want to satiate their craving for pizzas but yet still want to keep their wallets in check.

Win-win situation for both consumers and hawkers :)

pineapple is a basic ingredient in pizza????? maybe in pizza hut, an american invention. but u wont find pineapple in any pizzeria in italy. they dont even grow pineapples in italy!

the basic ingredients of pizza is the pizza ccrust, tomato base and cheese.

Jencook : I don't mean frozens pizza lah. I mean those toppings for pizza. It is essentially canned pineapple which is damn cheap. Ham, if you go to NTUC and see their home brand, they have a very good price. Other ingredients like mushrooms, green peppers are very cheap stuff lah. Even the seafood they used, you think very good quality meh? I tell you, even Zhi char stall used better qualities prawn and sotong.

All in all, the ingredients for making a pizza are actually very low cost. Why pizza is expensive is because the high cost of equipment but that is only if you have proper huge pizza oven and a proper dough making machine which churn out a yummy pizza. If you anyhow suka suka make flat a piece of dough, then chuck some pinapple, ham, some cheese, $8?? I say even cost of murtabak ingredients cost more! Because they still need to cook their mutton and stuff.

Please also don't denigrate what this stall seller is trying to do. He is providing food to a certain segment of the market who would appreciate his value proposition.

I think it is unfair for you to assume his pizza is not good when you have not even tried it. I would not have posted it if his pizza did not meet a certain level of quality.

In this day and age, where cancerous food courts and fast food chains are threatening the very existence of local food culture, we still have imbeciles insisting on 2 dollar food and complaining when new-generation hawkers set up stalls.

I for one welcome all these creative, youthful hawkers, if not our local food scene will merely exist only at the midrange price level and above, and these same complaining morons will be priced out and have nothing to eat but kopitiam.

Hmm...I've never really tasted pizza made by these young hawkerpreneurs before, and this one certainly looks real filling, but light at the same time!

Just look at the cheese being stretched...(pic of the thin crust)

Looks good, and I think $8 for a 12inch sounds really good to me without having to pay for any additional surcharges!

Wonder how this will taste like when I eat one small pizza together with the Gelato too>?

People who see food price as a direct summation of ingredient costs are shallow. What about labour costs? The skill involved requires monetary reward as well. Equipment (and subsequent devaluation), scarcity play a part too.

There will always be cheap food around, but don't take good cheap food for granted. Nobody has factored in inflation too, not even the hawkers themselves, which is why when the realisation strikes them, they up the price which pisses people off.

Having these sort of stalls in hawker centres also serve another important purpose which I guess parents with kids would appreciate.

You see, on that day itself, I was doing the father and son blogging thing and I was actually looking for some hawker food to eat. It was my son who spotted the pizza and was happy as pie because he still prefers eating at cafes and air con food courts and begrudgingly accompanied his Dad to the hawker centre. So the pizza really made his day!

So for families eating at hawker centres this is a real boon! The kids can have their pizzas while we can have our hokkien mee and Yong Tau Foo and also steal a slice of pizza.

I've always liked thin crust pizza more than the dough version. $8 for one of those? That sounds like a deal not to be missed. Cooking a pizza definitely costs more than cooking a bowl of fishball noodles, with the expensive equipment and energy consumed, time taken etc. So its reasonable to expect to pay more. I think $8 is a scream, if it is also good.

By the way the pizza $8 is cheap cos it's 12" and divide by 4pcs, it only $2pc, why not tho there is no parma ham, at least it's cheaper than most eateries that sells freshmade ones.

its strange my simple $8 pizza can spark out such a debate. My cheapest is an 8inch Magherita for$5. Like i mention earlier, i can't please everyone. For those who still prefer pan thick pizzas, there's always canadian and pizza hut. I'm not into that market.

Thin crust pizza dough do require certain ingredients to create and for those who do not know and fail to understand before commentin there's nothin i can do. There's many pizzeria out there who serves only thin crusts pizzas, similier to mine. If my ROC pizza stall doesn't appeal to you, i would appreciate you keep your comments to yourself. I'm jus a dude tryin to make a living.

BTW my neighbour next to me sells $2 chicken rice and its taste nice. My fave is his soup.

Actually, I have eaten at a few other Hawker Centre/Food Court pizzas. They are around. But I have not blogged them.

I posted this one because I thought the thin and very crispy crust was a little different from the rest and it is one I actually won't mind going back to eat again because there is something about it which is better than your usual Food Court/Hawker Centre pizza.

Yes Jencooks, I agree that this would go well with beer. You see now all the retired men (and women) gathering to drink beer with a plate of Sio Bak, but in a couple of years time when we all retire we might be having beer with thin crust pizza eh?

I think all in all in order to preserve our singaporean local hawker fare we have to start with the young. if our children all only like burgers and fast food, this will be the demand for our future food. A diversity of food is da best :)

I still love my sio bak but I can definitely see myself retiring eating pizzas and having beer with friends (I'm already doing that now!) :)

glenda why don't you see it from another angle? I enjoy my sio bak as much as I enjoy pizzas. So it's great to be able to enjoy them both under one food centre roof :)
This IS the trend that is going on in today's time as we are all influenced by the west as much as the east. Not forgetting other regional cuisines like jap, thai and taiwanese are all widely accepted these days. This is the precise reason why we are seeing more and more cafes, mid market or even upmarket restaurants serving asian, fusion or even singaporean food in their menu. One such example is Bakerzin.

Kopi Tiam (not necesssary for botak uncles - only your perception unless u are one)

AND WUD U CALL ME CHEAPSKATE because I happened to eat classy food at non-classy place besides others? No. period !!!

i do not understand why these "ang mo" food will be a threat.

i do not look down at our very own singapore hawker food and think that they cannot compete. In fact, i think they stand on their own equal terms, if not better.

I have full confidence in our chicken rice, our sio bak, our bak kut teh, our char kway teow, and of course our hokkien mee !

Sometimes, i want to eat a steak or a pizza and do not feel like going to a restaurant for that.

so what is wrong if i can have them in a hawker center and drink my kopi-o-kosong at the same time ? just like i enjoy my chicken rice with a kopi-o-kosong too. Its where i feel most comfortable.

Glenda, I think that it is best that we discuss this issue of cheap foreign food in hawker centres in the forum where you can start a new thread.

I think that the comments in the blog should focus more on the review of the food rather than side issues.

So this issue stops here and we can carry on this discussion in the forum where it is more appropriate.

Hmmm I hope that I'm posting in the right place, although it's something about a makan session. We should go to GM FC together! Order eveything! Gelato, pizza, that beef kway teow thing, hokkien mee, all the stuff you blogged about at the FC! Gives people like me who has never tried anything there before to try everything without eating like a pig and people who've tried all the other stuff to see if their standard has dropped. Good idea no?

And by the way, referring to my previous comment, I was also wondering if people would be more willing to pay for "ang moh" food than Singaporean food.

5-6 ppl is quite a bit as i've done my pizzas from scatch..Dr Les can pre order it first and hopefully if lunch i'm not bombarded than perhaps i can cope..

Thanks guys for ur support and kind words..to be frank was veri put off by wat i see bein written here..

sio bak pizza isn't too far fetched..my neighbour whom is sellin chix rice..we tried puttin his roasted chix on top of my pizza and it turned out fine..was gone in a matter of mins..

AT GMFC i've have gd relations with various stalls..chix rice..zhi char..sio bak stall etc..they treat me like their son since i'm so young.. i like sio bak too..i order from the auntie there..likewise..they at time order pizza from me too..and they r definately educated to a certain level..the ppl i know at GMFC r nice ppl..and i respect them

This is my first time commenting, although I have religiously followed ieat's blog since end 2005 (or was it early 2006?). I just want to say you guys have been doing a great job chronicling the best of what Singapore has to offer.

Glenda, I applauded your initial efforts to question and challenge ieat's statement on how hawkers should not compromise quality for affordability, and on encouraging so-called "high-class" food to be accessible to pple in coffeeshop/hawker centre settings. The trouble is, you simply latched onto the opportunity to create a nuisance of yourself by taking personal potshots at pple and making comments that really bordered on ridiculousness. My point is: whatever credibility you earned for yourself initially has long been lost because of your apparently stupidity and thoughtlessness. If you want to be heard, make ONE or a few statements and make it strong. Your trolling endeavours have likened you to a noisy brass trumpet of little value. I think ieat and team are sincerely trying to get your input in an objective way by inviting you to join them in their makan trips. From your responses to date, it is plain to see you are just trying to rile everybody up, instead being sincere and objective in seeking out the best way to sustain Singapore's finest food. If you are really sincere in perserving singapore's food heritage, then why dont u listen to what your opposition (in this case, ieat and team) is saying and learn to look at things from another perspective? Or is this about you wanting to win an argument and bask in the pathetic glory of winning it?

ieat and team, to be absolutely objective i haven't always found your reviews to reflect my personal experience with the hawker stall/restaurant in question. But while there were misses, there were definitely hits as well! :)

Btw glenda, dont waste your breath responding to me. I am an opiniated but elegant Elven princess and not a tiresome ugly troll (think lord of the rings). LOL

laundrygirl - i also do not always agree with ieat's opinions... more often than not. but i join in for the friendship and camaderie. its not always about the food.

After read your previous comment given by the link and I have to say, I agree with you on some points.

I read through A LOT of Leslie's posts, and it is obvious that he does not give many unfavourable reviews, as compared to other food blogs I've seen, which I guess, in turn, kind of.. questions his rating system as being too generic/free, would you say?

However, I really strongly feel that he would not give a positive review on yucky food. Yes, I agree that there aren't many negative reviews but if the food's horrible, I'm sure he'll comment on it.

When you said that he gives generic comments like "too wet/too dry", well no offense but I don't think Leslie's such a food expert or literary genius to give flowery descriptions to the food. He just speaks his mind and I think that's good enough. =]

No offense meant to anyone, especially you Bohtong.

It makes sense, Samantha, why Leslie appears to give favourable reviews all the time. That's because he almost only goes to good eateries that come recommended.

It's not as if he's taking a random sample of all the eateries in Singapore, then which it would be highly suspect if the ratings were 4s and 5s as well. When you have a skewed sampling method (ie all famous/highly rated eateries generally) then you're of course likely to end up with good scores.

Now, to serve as a control, we must send Leslie to eat at the likes of KFC, McDonalds and the yucky generic food courts to see their score.

Btw Leslie, KFC reintroduced the Devil Spicy drumlets, you can review that lol. I tried it and it seems to have been toned down.

But no food blogger would of his own free will go to bad eateries and blog about them, and no reader would be interested in generic bad eateries either.

You have a point in a way though, it seems that all the hawker backstories are also made available if the ratings are good. It would make sense for the owner to feel happy and share his story. If Leslie were to give a poor rating, the chef would probably not be as willing to talk.

Apart from Lesile's blog entry on "Relax one corner" pizza, this was featured on 8 days (Sept 4, 2008 - The chocolate issue, Pg. 64) with a 4/5 rating by Jamie Yap.

Bottom line, I don't see why there is so much bombardment about Lesile's choice of featured food.

Second, the issue about pricing, everybody should keep in mind that small stalls have alot to lose to big corporations when it comes to ingredients and rent. After sampling cakes from various outlets, I have also notice a difference in price. Many will be surprised that hotels cakes are actually cheaper than some of the commonly heard bakeries/pâtisserie...

So, when this 25-year old culinary arts graduate from Shatec decided to make his first move to start a store, WITHOUT even trying his food, crtics are made... Hey, that isn't the way to support our young entrepreneurs.

Last but not least, I have never understand the hassle of blogging food, when I try it myself. I appreciate this blog more than before. It is lots of work and time to consolidate good food for us, particularly hawker fares.

the pizza was crisp and light. nice :) no gelard feeling at all. however as it was made from scratch from a one man show, the wait time is really a lil long for a hawker environment where most people come chop chop eat and go kinda. I also wonder how the profit margins can be realized the current operation really limits the number of pizzas it can be sold esp during lunch hours.

and i felt that $8 was reasonable for the 12" pizza. 2 pizzas i think is enough to feed 3 persons..

Desong sorry for being blunt.When I first order from you you behave like chasing us away. Bashful Hunter also agree with me. You got a long way to go baring in mind there are so many yes so many good stalls around. Was surprised that you came out to talk to some of us and that change my opnion of you. Yes good attitude is good for business.

The pizza is very light and it will definitely appeal to the health conscious, especially the ladies.

Overall, value for money albeit, if the sales pick up, can consider getting another oven as the extended waiting time might not go down too well with the office crowd who only have an hour to makan their lunch.

A 2nd hand one will do.

Hi Desong, I'm have visited your stall and tasted your pizza today (the one who wanted to pay with a $50 note with no small change). I'm here wanted to thank you, for creating such a wonderful thin crust pizza for us. I can tell the quality of flour used in a bread and have lived and travelled in several European countries. The pizza you've made tasted very authentic, clean, and absolutely brilliant, and mark this, regardless of price. Folks, it's not about money when it's already at hawker centre price, it's about the quality of the food and the heart of the chef that matters. Keep it up, don't let those weird comments affects you (I'm sure not), and all the best!

The pizzas here are excellent. The Chef is humble and quietly dilligent. I would recommend this pizza to everyone who appreciates light, well-made pizza with extremely thin crust.

1 Large per person is usually just nice, with a cold beer from the nearby coffee stall.
