Xu Jun Sheng Teochew Porridge - Joo Chiat

Being 100% pure bred Swatow Teochews, Mom wasn't impressed with last weeks Taiwanese Porridge. So being the filial son that I am, ahem, I brought her to this well known Teochew Muay (porridge) place in Joo Chiat. With a 60 year history behind this shop, I am confident to score some points and retain my place as favourite son (among 3 brothers of which I am the eldest - already ahead on points from the start. ; ))
First up, what could be more Teochew then cold crabs? The Teochews live by the river, so the cuisine features fresh, fresh seafoods. Any self respecting Teochew Ah Hia would frown upon putting peppar, chilli, curry, butter onto your crabs! What, and destroy all that marvellous roe?
So why pay someone else to buy the crab and steam it for you? Can't you do it yourself? Well, unless you are an expert, no, not so easy. The crabs are handpicked by the resident Teochew Ah Hia, Ah Chwee, who ensures that each and everyone is full of roe and the meat packs the shell of the crab, we say this sort of crab is toi (solid) not pah (hollow). And if you ever bought crabs yourself, you will know what I mean.
The meat was sweet and solid, the roe creamy. $10 per crab 4/5 Mom loved the crab, but I must admit, that my Teochewness has been watered down, so I actually still prefer mine with black peppar.
Phwa, this one you got to try! Their prawns with tofu is fantastic. You can see a plate of this on almost every table. The secret, I am told is in the stock which is never decanted. Everyday, fresh pork bones, veges, spices etc is added to existing the existing stock and slowly boiled. We are talking 60 year stock! The prawns are super fresh and large, we'll have none of those soft, mushy, poor excuses for a prawn, we are Teochews, thankyou. $10 4/5 Must try this.
Just close your eyes, don't think about the cholesterol and sink your teeth into the braised Ter Kar (leg of pork), then let the tasty, creamy lipoid bolus coat the inside of your mouth with its flavour and slowly slide down your throat. Then, while your whole mouth is full of its savoury goodness, wash down with hot watery porridge and repeat. This Low (Hokkien: Lor ie braised in soy sauce) is definitely one of the best around, and the flesh and skin of the pork simply falls off the bone.
Again, the secret of a good Low is that you have to have all the stuff in a big pot, and everyday just add fresh ingredients. That way you preserve the lineage of the Low. Again, this one has a 60 year history, you get to partake of not only this chef's kang hoo (skills) but that of his father as well! Shiok shiok $5 per plate 4.5/5
I will continue to rave. The Heh Chor (Prawn rolls) are fantastic. Real crispy on the outside and a nice generous filling on the inside, mixed with the Gik You (Plum Sauce), Pow! Instant Gratification! $10 4.5/5 You just have to order this when you are there.
Though this fish was not swimming around when we ordered it, but it was real fresh. The fish are, again, bought fresh everyday. Fresh fish should only be steamed with the subtlest of seasonings. Bit of ginger, chilli, soy sauce and typically to the teochew style of steaming fish, sour plums. This brings out the flavour of the fish. Might be a bit bland for those used to eating deep fried fish with chilli sauce, but that is the cuisine of people living far from the river, where the fish isn't as fresh and they need to mask the fishy odour. $35 for a big fish 4/5 Great if you like to taste the fish rather then the sauce.
I still can't figure out how they make the sauce for the Siao Pai Chai so flavoursome, when Ah Chwee insists they don't use any lard in the cooking. Its got that nice wok hei, tasty, savoury, "can't get enough of me", flavour that would convert any staunch carnivores. $7 4/5
Trust this Teochew Ah Hia to ensure that you only get the freshest and best ingredients in the food. It is good but not cheap, you have to be willing to pay for good stuff, but it is not overly expensive, you really pay for what you get.
The original shop used to be located diagonally opposite their new shop which now has a comfortable air conditioned section. If you go during peak hours, ordering your food can be quite an adventure. You basically barge your way to get the attention of Ah Chwee and just quickly order what you want. He's got an elephant's memory, so be rest assured all your food will arrive later as per your order.
Conclusion
Currently my favourite Teochew Porridge place. Not the cheapest, but very affordable if you don't order the big fish and crabs. You can get quite a good feed if you go for lor bak, steamed mince meat, chai poh omelette, heh chor and tofu prawns. Big public car park in front of the shop and comfortable eating environment (there are 2 sections, make sure you head to back)
8.5/10 (T3.75+V2.75+S1+E1) If you are not used to Teochew food, don't go for the steam fish or cold crabs, because you would probably find it bland.

Impressed, you managed to hunt down this place. This has been my favorite TCM haunt for years - mostly patronised by regulars because its so hard to find. To me, one of the best TCM places in Singapore, as everything is freshly prepared and really tasty.
Other must tries -
Watercress (sai yong choy) fried with fuyu (fermented beancurd)
Sweet potato leaves fried with fuyu or with sambal
fish cake - they hand make it everyday
bittergourd - boiled soft in fermented black beans, really tasty
black fish (or hrr) - steamed with its scales still on, you just eat it with chilli and the sweet sauce. this is fatty, but the good kind of omega fat.
Meatball soup - clear soup with generous portions of large meatballs. good start to any meal.
you need to make a few trips to try everything, which is all goood....
Ps: as mentioned, not many people may know how to appreciate this kind of teochew food..
They have their special plum sauce dip for their cold crabs...a heavenly match and very appetizing. Made me forgot about all the black pepper, chilli or butter crabbies, at least temporarily. :)
Had a hard time finding this place initially. The stall is at the corner of the kopitiam and doesnt look like the usual over-the-counter teochew muay.
My gf and I had the following:

Hei Zhor
Sweet Potato Leaves with Sambal
Ter Kar (Pig's Trotters)
Missed out on the cold crabs (sold out!). Will wanna tackle the crabs after seeing so many customers walloping them!
Also wanna try the steamed minced meat!
The steamed fish looks so fresh at one table I saw, but not a steam fish person.

I ate at Xu Jun Sheng for the first time today. My bf's family love to eat there. Did anyone try the yam paste dessert? It's fantastic! But I'm sad to know that they will cease operation from 16th Dec 2007 until further notice :(

Hmmm, this is strange. I went there in early december and saw this notice below the yam paste picture saying they will cease operation from 16th December.
Heard the owner of the coffeeshop took it back and started selling the same stuff that Xu Jun Sheng sold.
Dropped by the other day and asked one of the workers the new location that Xu Jun Sheng but they just kept mum.
Yup the last time I went there (early dec), I saw the youngsters at the coffee shop selling exactly the same stuff too! Please let me know if anyone knows their new location. Thanks!
OK, i m going to do everyone a favor and try to track down the original Xu Jun Sheng. these guys have been around for yonks.. lets not get decieved by some copycat who take them over and sell same stuff..

this place is that good, so definitely must track them down.

yah, digusting shop owners, tried cheating wif the same type of food but std is soooo horrid. everything cooked wif so much salt, could even bite the salt crystal when eating the egg, cold crab i bet was put in freezer immediately from the wok, std totally unacceptable, all cooked by the bak chor mee uniform guys.
can't wait to find out where they are now, meanwhile goes to the diagonally opp corner 24hr TCM, not bad.

btw, if you like TCM, my favourite is Teo Heng at Hong Lim Complex, frequent that stall for more than a decade, everything so fresh, eggs cooked just rite (yolk 1/2 soft, be it braised or salted), sotong with roe, simply great.
another good teochew cold crab is "Ah Or", used to be at Ellenborough market, now at Bukit Merah, one more is "Lido", moved from Bendemeer to AutoCentre.

My mum bumped into one of the people at the temple a few days back.
They have reopened (YAY) at a coffeeshop further down the road. Its just diagonally opposite the Fei Fei shop i think. I'll go check it out one of these days and update again. I miss their fried kangkong.

59 Joo Chiat Place. Very near their old place, just next to the vegetarian restaurant opposite the coffeeshop where they used to be, at the other corner coffeeshop.
they are at the same coffee shop as the famous char kway tiao.
Ate there today. A very good Teochew Porridge/Cze Char stall, indeed! Especially enjoyed their fried sweet potato leaves with sambal and the fried tua tao. They have lots of cze char dishes. Saw some other tables ordering the la la. The meatballs soup looks good. Must try that next time. Plus the yam dessert. Is the char kway teow stall in the coffeeshop good? Since 1950, the sign says.
The coffeeshop is diagonally opposite Kim Choo Bak Chang shop and Fei Fei wanton noodles shop.
Had Tew Chew Street porridge earlier and it's excellent.
The braised long beans with hae bi, bak yee, braised cabbage, steamed belly pork with cincalok and a steamed mullet were all very well executed.
I really take my hats off these uncles who can transform such simple ingredients into tasty treats.
Don't know how long the two uncles here can carry on. When he served me the plate of fish, his hands were trembling...
I pray these hardworking stewards of traditional Teowchew cuisine can continue for as long as their bodies allow them :)
I always have the haebi hiam when I visit Tew Chew ST TCM. Their dishes look very simple but flavoursome, wholesome, fullness in taste. Really amazed that something that look so simple can taste so good. Not for everyone's taste though. I like simple and tasty food, so I love this stall's offerings.
Both Tew Chew St anr Xu Jun Sheng are stars in their own rights. Tew Chew St has limited variety so if I arrive late there's hardly anything left to order at times. Xu Jun Sheng's got a good variety of food. Their cze char dishes are great :)
Ok since Damien has brought up Tew Chew Street, let me add some more worth to his piece. I simply love the porridge here, the simplicity of their dishes, the cincalok pork belly, hae bi hiam, braised cabbage, heng cai, steam mullet are really good. The porridge itself is blogworthy already.
haha damien, both uncles' hands have been trembling since so long ago. :) I always buy their hae bi hiam for takeaway, squeeze the lime over and eat it for shiokalicious Teochew porridge!

Wah.. !! I don't usually complain about food.. but this time I can't keep silent.!!!
Just went there for lunch on a Sunday.. Food was disgusting!! $35 for 3 people.. 3 Bowls of porridge, one potato leaf, one crayfish, small plate of intestine and small pork knuckle!!
Everything was cold. the porridge was coldish.. the food had no taste and there were flies everywhere!!!
Honestly, the worst food I've had in a while!!
Anon, yes there were some kind of small insects flying around but they weren't flies when I was there. Strange that your sweet potato leaves were cold. That's a cze char dish fried fresh on the spot. The one I had was hot and had a very fragrant wok hei flavour. The place was very crowded on the Friday afternoon I went. Looks like one place with many loyal regulars, otherwise a place in a hard-to-find location wouldn't survive.

Does anyone know roughly what time the cold crab for XJS usually sells out? I went at around 8pm and no more liao.
Also, the Redhill market with the good TCM is which one? The one near the MRT? What time does it close?
